Abstract
Spirits are made by fermenting sugar (carbohydrate)-containing liquids by a large amount of yeast, in any event exceeding 10 kg. to each 1000 litres of liquid, and after fermentation the yeast or part of it is removed from the wholly or partly exhausted liquid. The yeast thus removed, or part of it, is employed directly or after an appropriate treatment, alone or together with yeast derived from other sources as seed yeast in another fermentation for production of spirits, and the yeast from a second fermentation may be used as seed yeast in a third and subsequent fermentations. The addition of nutrient salts is avoided.
