Gellan gum is obtained by pure culturing and fermenting microorganisms (Pseuudomonas dlodea) into carbohydrates and purifying the polysaccharide gum material with isopropyl alcohol, followed by drying and pulverizing. When gellan gum is dispersed and hydrated in water at high temperature and then metal ion or metal salt is further reacted without extra strong physical stress, excellent gel is formed quickly and easily.
