Description
項1. (A)脂質、(B)酸性領域でゲル化する増粘剤、(C)アラビアガム及びガティガムよりなる群から選択される少なくとも1種の乳化安定剤、並びに(D)2価の金属塩を含有することを特徴とする、乳化食品組成物。
項2. pHが5.5以上9未満である、項1に記載の乳化食品組成物。
項3. 更に、タンパク質及び糖質よりなる群から選択される少なくとも1種を含む、項1に記載の乳化食品組成物。
項4. 前記(B)酸性領域でゲル化する増粘剤が、ペクチン、アルギン酸、アルギン酸の塩、及びジェランガムよりなる群から選択される少なくとも1種である、項1に記載の乳化食品組成物。
項5. 前記(B)酸性領域でゲル化する増粘剤が、ローメトキシルペクチンである、項1に記載の乳化食品組成物。
項6. 前記(D)2価の金属塩が、酸性領域で2価の金属イオンを遊離する不溶性塩である、項1に記載の乳化食品組成物。
項7. 前記(D)2価の金属塩が、2価の金属のリン酸塩である、項1に記載の乳化食品組成物。
項8. (A)脂質を0.1〜100g/L、(B)酸性領域でゲル化する増粘剤を1〜70g/L、(C)アラビアガム及びガティガムよりなる群から選択される少なくとも1種の乳化安定剤を0.5〜70g/L、並びに(D)2価の金属塩を0.1〜10g/L含有する、項1に記載の乳化食品組成物。
項9. 25℃での粘度が、2〜100mPa・sである、項1に記載の乳化食品組成物。
項10. 嚥下障害者に栄養補給するために使用される、項1に記載の乳化食品組成物。
項11. 嚥下障害者用の経腸栄養剤の製造のための、(A)脂質、(B)酸性領域でゲル化する増粘剤、(C)アラビアガム及びガティガムよりなる群から選択される少なくとも1種の乳化安定剤、並びに(D)2価の金属塩を含有する乳化食品組成物の使用。
項12. 嚥下障害者に栄養補給する方法であって、
(A)脂質、(B)酸性領域でゲル化する増粘剤、(C)アラビアガム及びガティガムよりなる群から選択される少なくとも1種の乳化安定剤、並びに(D)2価の金属塩を含有する乳化食品組成物を、嚥下障害者に経管投与する工程を含む、栄養補給方法。
本発明の乳化組成物は、(A)成分として、脂質を含有する。本発明で使用される脂質は、その種類については特に制限されないが、例えば、米油、ヤシ油、大豆油、コーン油、菜種油、パーム油、サフラワー油、ヒマワリ油、大豆油、オリーブ油、綿実油、落花生油、カカオ脂等の植物油;魚油、牛脂、豚脂等の動物油;脂肪酸、中鎖脂肪酸(炭素数6〜12程度)トリグリセリド、ドコサヘキサエン酸、エイコサペンタエン酸等が挙げられる。本発明の乳化食品組成物に配合する油脂は、1種単独であってもよく、2種以上の組み合わせであってもよい。
本発明の乳化組成物は、(B)成分として、酸性領域でゲル化する増粘剤を含有する。酸性領域でゲル化する増粘剤としては、可食性であって、中性領域ではゲル化せずに酸性領域でゲル化する性質を示すものであれば特に制限されない。このような増粘剤としては、例えば、pHが約5以下の領域でゲル化する増粘剤が挙げられ、具体的には、ペクチン、アルギン酸、アルギン酸の塩、ジェランガム、カラギーナン等が挙げられる。
本発明の乳化食品組成物は、(C)成分として、アラビアガム及びガティガムよりなる群から選択される少なくとも1種の乳化安定剤を含有する。
本発明の乳化食品組成物は、(D)成分として、2価の金属塩を含有する。このように、(A)〜(D)成分を一体として含むことにより、本発明の乳化組成物は、加熱殺菌処理に供しても良好な流動性及び乳化安定性を有しながらも、胃内に入るとゲル化するという特性を備えることが可能になる。
本発明の乳化食品組成物には、上記(A)〜(D)成分の他に、タンパク質又は糖質のいずれか一方、好ましくはこれらの双方を含むことができる。
本発明の乳化食品組成物の乳化形態については、特に制限されず、水中油型又は油中水型のいずれであってもよいが、好ましくは水中油型が挙げられる。
本発明の乳化食品組成物の製法については、特に制限されず、一般的な乳化食品と同様の方法で製造することができる。具体的には、本発明の乳化組成物は、水に、(A)〜(D)成分及び必要に応じて配合される他の成分を所定量添加、混合した後に、ホモジナイザーで乳化することにより、製造することができる。本発明の乳化食品組成物の製法において、各配合成分の添加順については、特に制限されないが、(B)成分の添加時には、(B)成分が添加される混合液は(B)成分によるゲル化が生じないpH領域に調整しておくことが望ましい。
本発明の乳化食品組成物は、健常人の栄養補給食として使用することもできるが、胃内に入るまでは適度な流動性を備えながらも胃内に入るとゲル化する特性を備えているので、胃食道逆流防止が求められる人に使用される食品(即ち、胃食道逆流防止用の食品)、とりわけ嚥下障害者用の経腸栄養剤として好適に使用される。更に、本発明の乳化食品組成物は、胃内に入るとゲル化して食物の消化管内通過時間を調節し、下痢を防止することもできるので、下痢防止食品としても有用である。
表1に示す組成の乳化食品組成物(OW型)を調製した。なお、使用した乳化安定剤の種類及び配合量については、表2に示す通りである。具体的には、ローメトキシルペクチンを除く各配合成分を水に加えてミキサーで混合した後、pH調整(pH 7)、ローメトキシルペクチンを加え、高圧ホモジナイザー(RANNIE 8.30H型ミニラボ APV社製使用)にて均質化(50MP、2パス)を行った。均質化した乳化食品組成物はパウチに100mL充填した後に、加熱殺菌処理(121℃、10分)に供した。加熱殺菌後に各乳化食品組成物を25℃で一晩放置した後に、目視にて油層分離の有無を確認し、乳化安定性を評価した。なお、乳化安定性の評価は、下記の判定基準に従って行った。
5:油層の分離や凝集物の生成が全く認められない。
4:油層の分離や凝集物の生成が僅かに認められる。
3:油層の分離又は凝集物の生成が明らかに認められるが、混合により再懸濁可能である。
2:油層の分離又は凝集物の生成が明らかに認められ、混合により再懸濁が不可能である。
1:油層の分離又は凝集物の生成が顕著に発生しており、混合により再懸濁が不可能である。
表4に示す組成の乳化食品組成物(OW型)(実施例3及び4)を調製した。具体的には、ローメトキシルペクチンを除く各配合成分を水に加えてミキサーで混合した後、pH調整(pH 7)、ローメトキシルペクチンを加え、高圧ホモジナイザー(RANNIE 8.30H型ミニラボ APV社製使用)にて均質化(50MP、2パス)を行った。均質化した乳化食品組成物はパウチに100mL充填した後に、加熱殺菌処理(121℃、10分)に供した。
アラビアガムの配合量を変化させて、表6に示す組成の乳化食品組成物(OW型)(実施例5−9)を調製した。具体的には、ローメトキシルペクチンを除く各配合成分を水に加えてミキサーで混合した後、pH調整(pH 7)、ローメトキシルペクチンを加え、高圧ホモジナイザー(RANNIE 8.30H型ミニラボ APV社製使用)にて均質化(50MP、2パス)を行った。均質化した乳化食品組成物はパウチに100mL充填した後に、加熱殺菌処理(121℃、10分)に供した。加熱殺菌後に各乳化食品組成物を25℃で一晩放置した後に、目視にて油層分離の有無を確認し、乳化安定性を評価した。なお、乳化安定性の評価は、上記試験例と同様の方法で行った。
ガティガムの配合量を変化させて、表8に示す組成の乳化食品組成物(OW型)(実施例10−16)を調製した。具体的には、ローメトキシルペクチンを除く各配合成分を水に加えてミキサーで混合した後、pH調整(pH 7)、ローメトキシルペクチンを加え、高圧ホモジナイザー(RANNIE 8.30H型ミニラボ APV社製使用)にて均質化(50MP、2パス)を行った。均質化した乳化食品組成物はパウチに100mL充填した後に、加熱殺菌処理(121℃、10分)に供した。加熱殺菌後に各乳化食品組成物を25℃で一晩放置した後に、目視にて油層分離の有無を確認し、乳化安定性を評価した。なお、乳化安定性の評価は、上記試験例と同様の方法で行った。
Claims (10)
- (A)脂質を0.1〜100g/L、(B)酸性領域でゲル化する増粘剤を1〜70g/L、(C)アラビアガムを0.5〜70g/L、及び(D)2価の金属塩を0.1〜10g/L含有することを特徴とする、乳化食品組成物。
- pHが5.5以上9未満である、請求項1に記載の乳化食品組成物。
- 更に、タンパク質及び糖質よりなる群から選択される少なくとも1種を含む、請求項1又は2に記載の乳化食品組成物。
- 前記(B)酸性領域でゲル化する増粘剤が、ペクチン、アルギン酸、アルギン酸の塩、及びジェランガムよりなる群から選択される少なくとも1種である、請求項1〜3のいずれかに記載の乳化食品組成物。
- 前記(B)酸性領域でゲル化する増粘剤が、ローメトキシルペクチンである、請求項1〜4のいずれかに記載の乳化食品組成物。
- 前記(D)2価の金属塩が、酸性領域で2価の金属イオンを遊離する不溶性塩である、請求項1〜5のいずれかに記載の乳化食品組成物。
- 前記(D)2価の金属塩が、2価の金属のリン酸塩である、請求項1〜6のいずれかに記載の乳化食品組成物。
