Abstract
Description
チョコレートの一般的構成は、砂糖50%以下、カカオマス30〜50%、油脂を含む脂肪分が約30%である。チョコレートの脂肪分の中で、ココアバターの含量はチョコレートの種類によって異なるが、通常60%程度である。
ココアバターは天然作物から得られ、気候変化により供給が変動するし、高価なので、これを代替するために、植物性油脂がチョコレートのココアバターの代用油脂として使用されている。この代用油脂は、パーム核油及び椰子油を硬化させたものが使用されたが、ココアバターとの相溶性がなかった。ココアバターの代用油脂は製造方法と構成成分により、ココアバター代用脂(cocoa butter equivalent and extender、CBE)、ココアバター代替脂(cocoa butter replacer、CBR)、ココアバター置換物(cocoa butter substitute、CBS)の三種類に分類される。
植物性油脂を脂肪酸又は脂肪酸誘導体と混合し、原料油脂を製造する工程;及び
前記原料油脂を酵素的エステル交換反応する工程、により製造することができる。
本発明の油脂組成物は、A、D、Fを使用し、比較評価のためSOS含量がPOS含量より高い常用CBE、天然ココアバターを共に製造した。配合比率は表4に示した。
前記の製造された5種類のチョコレートの官能評価を行った。組織感(Texture)、食感(Mouth feeling)、風味(flavor release)、全体選好度(Total feeling)に対して、1ないし10点で表した。官能評価の結果は表5に示した。
前記の製造された5種類のチョコレートに対して、ブルーム耐性評価を実施した。32℃で12時間、20℃で12時間保管することを1cycleとして、ブルームが発生するまで繰返して保管した。初めてブルーム現象が発生するcycle数を下記表6に示した。
Claims (6)
- 組成物中のPOS/SOSトリグリセリドの重量比が2ないし12で、組成物中のトリグリセリドの総重量を基準としてPOS含量が30〜55wt%である、チョコレート又は製菓用の油脂組成物。
- 前記組成物は、
植物性油脂を、脂肪酸又は脂肪酸誘導体と混合し原料油脂を製造する工程;及び
前記原料油脂を酵素的エステル交換反応する工程、により製造することを特徴とする、請求項1に記載の油脂組成物。 - 前記植物性油脂は、
パーム核油(palm kernel oil)、パーム油(palm oil)、ひまわり油(sun flower oil)、及びこれらの分別物からなる群より選ばれる一つ又は二つ以上の混合物であることを特徴とする、請求項2に記載の油脂組成物。 - 前記脂肪酸又は脂肪酸誘導体は、脂肪酸のパルミチン酸(Palmitic acid)、ステアリン酸(Stearic acid)、及びこれらの脂肪酸誘導体であるパルミチン酸エチルエステル(Palmitic acid ethyl ester)、ステアリン酸エチルエステル(stearic acid ethyl ester)、パルミチン酸メチルエステル(Palmitic acid methyl ester)、ステアリン酸メチルエステル(stearic acid methyl ester)からなる群より選ばれる一つ又は二つ以上の混合物であることを特徴とする、請求項2又は3に記載の油脂組成物。
- 請求項1ないし3のいずれか一つに記載の油脂組成物を含む、ココアバター同等脂。
- 請求項1ないし3のいずれか一つに記載の油脂組成物を用いて製造されたチョコレート。
