Abstract
1296420 Restructuring meat UNILEVER Ltd 11 June 1971 [15 June 1970] 28882/70 Headings A2B and A2U [Also in Division B5] A restructured meat product is made by extruding a fibrous comminute of meat as multiple streams concurrently with an edible matrix-forming material, and subjecting the extrudate to lateral compaction, the extrusion process being such that at least some of the fibres in the meat comminute are aligned in the direction of extrusion. These fibres are preferably part of the meat but may, e.g. if the fibrous structure of the meat is destroyed by the comminuting, be added fibres obtained from other meat, or other fibres, e.g. made from soy or groundnut protein. The matrix material may be based on wheat flour or finely milled (non-fibrous) raw meat such as beef or chicken, and may include agents such as wheat gluten, methyl cellulose, heat-setting egg albumen to modify its cohesive and binding properties &c. The lateral compaction of the extrudate may be effected in a tapered nozzle which imparts a regular or irregular crosssection to the product, or in a nozzle of flexible material subjected to periodic distortion by a cam &c. A layer of fat may be applied to surround the product partly or wholly. One form of extrusion apparatus comprises a meat comminute chamber 1, a matrix material chamber 2, and meat extrusion tubes 5 which pass through a plate with openings 7 through which the matrix material is extruded around the tubes 5. An extrusion zone 6 leads into a compaction nozzle 8. The tubes 5, of which only a few are shown, are irregularly arranged and may terminate in the openings 7 short of the zone 6. In a modification, the chamber I contains a rotating knife to prevent blockage of the entrances to the tubes 5 by accumulation of fibrous matter, and the plate containing the openings 7 has secured to it flexible tubes of polyethylene &c such that each tube receives the extrudate from a tube 5 and from the opening 7 surrounding it. These flexible tubes terminate in the compaction nozzle where they are deformed by the tapering bore of the nozzle.
