Claims (15)

  1. Dispositif de coupe de produits alimentaires, en particulier trancheuse à haute performance, comportant
    une alimentation en produits (11) qui amène un produit à découper (27) le long d'une direction d'amenée de produits (P) jusqu'à un plan de coupe (S) dans lequel se déplace un couteau de coupe (13) en particulier en rotation et/ou en révolution,
    dans lequel
    l'alimentation en produits (11) comprend au moins un convoyeur de produit (29') réalisé pour le convoyage continu du produit (27), et un support de produit (40') susceptible de venir en engagement avec le produit (27), en particulier avec une extrémité arrière (63) du produit,
    il est prévu un moyen de commande pour le support de produit (40'), qui est réalisé pour déplacer, après commencement de l'opération de coupe, le support de produit (40') depuis une position d'attente libérant le chemin pour le produit (27) jusque dans une position de travail en arrière du produit (27) et/ou dans le chemin pour le produit (27), et pour le déplacer en retour jusque dans la position d'attente après avoir terminé l'opération de coupe,
    caractérisé en ce que
    le support de produit (40') et le convoyeur de produit (29') constituent un ensemble ou font partie d'un groupe structurel commun, le support de produit (40') étant de préférence intégré dans le convoyeur de produit (29'), le convoyeur de produit (29') va jusqu'au plan de coupe (S) et le support de produit (40') est réalisé avec deux parties latérales (75, 77), à son extrémité arrière il est monté mobile en pivotement autour d'un axe (87) par rapport à des parties latérales (85) du convoyeur de produit (29'), à son extrémité avant il est pourvu de griffes de retenue (43) et il est mobile par rapport au convoyeur de produit (29') dans la direction d'amenée de produit (P).
  2. Dispositif selon la revendication 1,
    caractérisé en ce que
    le mouvement de déplacement du support de produit (40') s'effectue avec une composante transversale à la direction d'amenée de produit (P).
  3. Dispositif selon la revendication 1 ou 2,
    caractérisé en ce que
    le support de produit (40') agit dans la zone d'extrémité, située au niveau du plan de coupe (S), d'un trajet de convoyage de produit s'étendant le long de la direction d'amenée de produit (P).
  4. Dispositif selon l'une au moins des revendications précédentes,
    caractérisé en ce que
    dans la position d'attente, le support de produit (40') est espacé du plan de coupe (S) et/ou
    en ce que dans la position d'attente, le support de produit (40') est agencé à côté du produit (27) ou au-dessus du produit (27).
  5. Dispositif selon l'une au moins des revendications précédentes,
    caractérisé en ce que
    le convoyeur de produit (29') est réalisé pour solliciter le produit (27) par une force de retenue ou de coincement accrue, au moins pendant le déplacement du support de produit (40') jusque dans la position de travail.
  6. Dispositif selon l'une au moins des revendications précédentes,
    caractérisé en ce que
    le convoyeur de produit (29') comprend un convoyeur attaquant du côté supérieur du produit, en particulier un convoyeur à bande, et en particulier le convoyeur à bande (29") est susceptible d'être abaissé au moins partiellement en arrière du produit (27), afin de transférer le support de produit (40") depuis la position d'attente jusque dans la position de travail.
  7. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que
    le convoyeur de produit comprend au moins une bande sans fin à laquelle le support de produit peut être couplé de telle sorte que dans la position de travail le support de produit est entraîné par la bande sans fin et que dans la position d'attente il est dégagé de la bande sans fin.
  8. Dispositif selon l'une au moins des revendications précédentes,
    caractérisé en ce que
    le support de produit (40, 40") est agencé dans une zone d'extrémité avant, tournée vers le plan de coupe (S), du convoyeur de produit (29, 29") et la zone d'extrémité avant du convoyeur de produit (29, 29") est mobile en direction d'amenée de produit (P) entre une position de départ espacée du plan de coupe (S) et une position de fin de course située plus près du plan de coupe (S).
  9. Dispositif selon l'une au moins des revendications précédentes,
    caractérisé en ce que
    le convoyeur de produit (29, 29") est mobile dans son ensemble par rapport au couteau de coupe (13).
  10. Dispositif selon l'une au moins des revendications précédentes,
    caractérisé en ce que
    entre une extrémité avant du convoyeur de produit (29, 29') et le plan de coupe (S), il est prévu un élément de maintien vers le bas pour maintenir et/ou guider le produit (27).
  11. Dispositif selon l'une au moins des revendication précédentes,
    caractérisé en ce que
    le support de produit (40') est mobile par rapport au convoyeur de produit (29') dans la direction d'amenée de produit (P) entre une position de départ espacée du plan de coupe (S) et une position de fin de course située plus près du plan de coupe (S).
  12. Dispositif selon l'une au moins des revendication précédentes,
    caractérisé en ce que
    le support de produit (40') comprend un moyen de préhension pilotable, en particulier au moins deux griffes de retenue (43) mobiles en pivotement l'une contre l'autre.
  13. Procédé pour couper des produits alimentaires au moyen d'un dispositif selon l'une des revendications précédentes, dans lequel au moins un produit (27) à découper, en particulier une pluralité de produits successifs, est/sont amené(s) jusqu'au plan de coupe (S) le long de la direction d'amenée de produit (P),
    comprenant les étapes consistant à :
    - positionner le support de produit (40') dans la position d'attente ;
    - amener le produit (27) au moyen du convoyeur de produit (29') ;
    - déplacer le support de produit (40') jusque dans la position de travail lorsque l'extrémité arrière (63) du produit ou une zone d'extrémité arrière (79) du produit (27) s'est déplacée au-delà du support de produit (40') situé dans la position d'attente ou se trouve au niveau du support de produit (40') ;
    - amener en engagement le support de produit (40') avec le produit (27), en particulier avec la zone d'extrémité arrière du produit (27) ou avec l'extrémité arrière (63) du produit, et déplacer le support de produit et le produit le long de la direction d'amenée de produit (P) ; et
    - rappeler le support de produit (40') jusque dans la position d'attente lorsque l'opération de coupe est terminée.
  14. Procédé selon la revendication 13,
    caractérisé en ce que
    le support de produit (40') soutient le convoyeur de produit (29') lors de l'amenée du produit (27), ou se charge de l'amenée du produit (27) du convoyeur de produit (29') lorsque le support de produit (40') est en engagement avec le produit (27).
  15. Procédé selon la revendication 12 ou 13,
    caractérisé en ce que
    pour amener le produit (27), le support de produit (40') est déplacé par rapport au convoyeur de produit (29') ou le convoyeur de produit (29, 29") est déplacé dans son ensemble, y compris le support de produit (40, 40").
