Abstract

El procedimiento comprende el secado, curado y conservación de productos sólidos o semisólidos del sector de la alimentación, mediante la aplicación de cambios de presiones de un valor igual, superior o inferior a la atmosférica, para la administración y control de un gas oxidante y posterior extracción de gases. La instalación comprende una cámara o receptáculo de cierre hermético, donde hay unos mecanismos de administración de la presión positiva y negativa, y unos sistemas de control de temperatura y humedad.
