Abstract
La presente invención se refiere a un procedimiento para permitir la producción de una composición de partículas que contiene trehalosa dihidrato cristalina con un rendimiento de producción más alto contra almidón, por medio de pasos consistentes usando almidón como material; el objeto anterior es resuelto suministrando un procedimiento de producción para producir una composición de partículas que contiene a,a-trehalosa dihidrato cristalina en una cantidad del 98.0% en peso o mayor, sobre una base sólida seca, caracterizado porque comprende los pasos de dejar actuar sobre almidón licuado una enzima formadora de a-a glicosiltrehalosa derivada de un microorganismo del género Arthrobacter y una enzima liberadora de trehalosa derivada d un microorganismo del género Arthrobacter junto con una enzima desramificadora de almidón y una ciclomaltodextrina glucanotransferasa; permitir actuar glucoamilasa sobre la mezcla resultante para obtener una solución de sacárido que contiene a,a-trehalosa; precipitar a,a-trehalosa dihidrato cristalina de la solución de sacárido anterior; recolectar la a,a-trehalosa dihidrato cristalina precipitada por medio de una centrífuga; y dejar envejecer y secar los cristales recolectados; en donde se usa una ciclomaltodextrina glucanotransferasa natural o recombinante del género Paenibacillus, o una enzima mutante de la misma, como la ciclomaltodextrina glucanotransferasa para aumentar el contenido de a,a-trehalosa en dicha solución de sacárido a más de 86.0% en peso, sobre una base sólida seca, sin pasar a través de un paso de fraccionamiento por cromatografía de columna.
