Abstract

La presente descripción proporciona composiciones edulcorantes novedosas que comprenden un compuesto que tiene una estructura de acuerdo con la Fórmula (I): (ver Fórmula) en donde R1, R2, R3, y R4 se describen en la presente descripción. Además, se proporcionan métodos para modular el perfil del dulzor de un producto al adicionar un compuesto de la Fórmula (I) al producto, tal como un producto de bebida o un producto alimenticio. Por ejemplo, el compuesto descrito en la presente descripción puede añadirse para aumentar el dulzor total de una bebidas edulcoradas nutritivas; disminuir la aparición del dulzor para edulcorantes de alta potencia, tales como rebaudiósido A; reducir las notas desagradables de sabor amargo, metálico y de regaliz de edulcorantes de alta potencia; y mejorar la calidad dulce de los productos edulcorados.
