Abstract
Los aceites funcionales provistos en la presente se formulan para contenido de grasa saturada bajo, cristalización rápida, sin contenido de trans, ácido alfa-linolénico (ALA) alto, y una relación específica de ácidos omega - 6 (linoleico, C18 : 2) a omega - 3 (alfa-lonolénico, C18:3). Los aceites funcionales provistos en la presente se formulan con aceite vegetal líquido y fracción de ácidos grasos saturados concentrada, donde la fracción de ácidos grasos saturados concentrada se deriva principalmente de mezclas físicas inter-esterificadas de aceite líquido y aceite vegetal completamente hidrogenado. El conjunto único de propiedades funcionales y nutrimentales deseables no ha sido formulado simultáneamente previamente en composiciones de lípidos adecuadas para aplicaciones de manteca vegetal y aceite de rocío.
