Abstract
Description
(1)本発明に係る表面焼成食品は、第一の食品と、油脂を含有する第二の食品とを含み、第二の食品表面の一部又は全部が糖の加熱生成物で覆われていることを特徴とする。
(2)上記(1)において、前記第一の食品表面の少なくとも一部が、前記第二の食品によって被覆されたことを特徴とする。
(3)前記第二の食品とは、チョコレート類および油脂からなる食品群から選択された1種又は2種以上の食品であることを特徴とする。
(4)前記第一の食品とは、プリン、クレームブリュレ、カスタードプディング、アイスクリーム、ケーキ、その他の洋生菓子、アイスミルク、ラクトアイス、氷菓、その他の焼き菓子、チーズ、ヨーグルト、パスタ、食肉、パンからなる食品群から選択された1種又は2種以上の食品であることを特徴とする。
(5)前記第二の食品は容器に充填された前記第一の食品の前記容器開口部側の表面を被覆するように載置されることを特徴とする。
(6)本発明に係る表面焼成食品の製造方法は、第一の食品と、第一の食品表面の少なくとも一部を被覆する油脂を含有する第二の食品とを含む表面焼成食品の製造方法であって、第二の食品表面に付着させた糖を加熱し、糖の加熱生成物を生成する工程を備えることを特徴とする。
(7)また、本発明に係る表面焼成食品の製造方法における糖の加熱生成物は、前記糖を加熱しカラメル化させて得られるものであることを特徴とする。
以下、実際に下記のとおり製造した容器入り食品を一定の条件下で保存した場合の例を示す。
(食品例1)

第二の食品:チョコレート利用食品
保存環境: 冷凍庫内(−20℃以下(−24℃設定))
(比較例1)
第1の食品:アイスクリーム

当該食品例1と比較例1において使用した第一の食品としてのアイスクリームおよび保存環境は同一である。

- 第一の食品と、油脂を含有する第二の食品とを含み、第二の食品表面の一部又は全部が糖の加熱生成物で覆われていることを特徴とする表面焼成食品。
- 前記第一の食品表面の少なくとも一部が、前記第二の食品によって被覆されたことを特徴とする請求項1に記載の表面焼成食品。
- 前記第二の食品とは、チョコレート類および油脂からなる食品群から選択された1種又は2種以上の食品であることを特徴とする請求項1又は2に記載の表面焼成食品。
- 前記第一の食品とは、プリン、クレームブリュレ、カスタードプディング、アイスクリーム、ケーキ、その他の洋生菓子、アイスミルク、ラクトアイス、氷菓、その他の焼き菓子、チーズ、ヨーグルト、パスタ、食肉、パンからなる食品群から選択された1種又は2種以上の食品であることを特徴とする請求項1乃至3のいずれか1項に記載の表面焼成食品。
- 前記第二の食品は容器に充填された前記第一の食品の前記容器開口部側の表面を被覆するように載置されることを特徴とする請求項1乃至4のいずれか1項に記載の表面焼成食品。
- 第一の食品と、第一の食品表面の少なくとも一部を被覆する油脂を含有する第二の食品を含む表面焼成食品の製造方法であって、第二の食品表面に付着させた糖を加熱し、糖の加熱生成物を生成する工程を備えることを特徴とする表面焼成食品の製造方法。
- 前記糖の加熱生成物は、前記糖を加熱しカラメル化させて得られるものである請求項6に記載の表面焼成食品の製造方法。
