Abstract

PURPOSE:To obtain a frozen fried food for cooking in a microwave oven capable of providing texture similar to that just after cooking, by dipping a food material in a batter consisting of wheat flour formed into a cellular state by a thermally coagulable foaming material, applying bread crumb, frying the resultant material in oil and freezing the baked material. CONSTITUTION:A thermally coagulable foaming material (e.g. egg white or powdery vegetable protein) is added to wheat flour, water and a seasoning and the specific gravity of the resultant batter is preferably adjusted to 0.2-1.0. The food material is dipped in the above-mentioned batter and bread crumb is applied thereto. The obtained material is then fried in oil and frozen to afford the aimed frozen food for cooking in a microwave oven. The frozen fried food is subsequently thawed and thermally cooked in the microwave oven to provide crispy texture.
