Description
[1] 水又は可食性水溶液で所望のエタノール濃度となるように希釈することによってアルコール飲料を製造するための飲料用濃縮原液であって、
前記飲料用濃縮原液は、エタノールと疎水性香気成分を含有しており、
前記疎水性香気成分の少なくとも一部は、前記飲料用濃縮原液に溶解しており、
25℃における720nmの吸光度が、水で6倍希釈した希釈液の5℃における720nmの吸光度よりも0.05以上小さく、
前記飲料用濃縮原液を希釈して調製された飲料では、前記飲料用濃縮原液に溶解していた前記疎水性香気成分の少なくとも一部が不溶化し、かつ、液面に疎水性の液状物が浮いていることを特徴とする、飲料用濃縮原液。
[2] 前記疎水性香気成分は、前記飲料用濃縮原液中に均一に存在している、前記[1]の飲料用濃縮原液。
[3] エタノール濃度が20~60容量%である、前記[1]又は[2]の飲料用濃縮原液。
[4] 25℃において透明である、前記[1]~[3]のいずれかの飲料用濃縮原液。
[5] 前記飲料用濃縮原液に溶解している疎水性香気成分の濃度Pc(g/100g)が、Sb×Ac/Ab[Ac(容量%)は前記飲料用濃縮液のエタノール濃度であり、Tc(℃)は前記飲料用濃縮原液の液温であり、Ab(容量%)は前記飲料用濃縮液を希釈して調製される飲料のエタノール濃度であり、Tb(℃)は前記飲料の液温である]よりも大きい、前記[1]~[4]のいずれかの飲料用濃縮原液。
[6] 25℃における420nm、530nm、又は630nmの吸光度が、それぞれ、水で6倍希釈した希釈液の5℃における420nm、530nm、又は630nmの吸光度よりも小さい、前記[1]~[5]のいずれかの飲料用濃縮原液。
[7] 前記飲料用濃縮原液には、乳化状態の疎水性香気成分も含有されている、前記[1]~[6]のいずれかの飲料用濃縮原液。
[8] 前記疎水性香気成分が、果実の香気成分である、前記[1]~[7]のいずれかの飲料用濃縮原液。
[9] 前記果実が柑橘類である、前記[8]の飲料用濃縮原液。
[10] 前記疎水性香気成分が、シトラールを含む、前記[1]~[9]のいずれかの飲料用濃縮原液。
[11] 容器内に封入されている、前記[1]~[10]のいずれかの飲料用濃縮原液。
[12] 前記[1]~[11]のいずれかの飲料用濃縮原液を、水又は可食性水溶液で希釈する、飲料の製造方法。
[13] 前記飲料用濃縮原液を、2~15倍希釈する、前記[12]の飲料の製造方法。
希釈により不溶化した疎水性香気成分を含有するアルコール飲料を製造可能な飲料用濃縮原液を調製し、希釈しても濁りのない清澄なアルコール飲料が製造される市販の飲料用濃縮原液について、希釈して調製されたアルコール飲料の外観等を調べた。市販品としては、エタノール濃度が40容量%である市販品Aと、エタノール濃度が18容量%である市販品Bの2種類を用いた。
実施例1で製造した試験区1の飲料用濃縮液を用いて、希釈して製造されたアルコール飲料の香味に対する、飲料用濃縮液中の疎水性香気成分の乳化状態の影響を調べた。
Claims (13)
- 水又は可食性水溶液で所望のエタノール濃度となるように希釈することによってアルコール飲料を製造するための飲料用濃縮原液であって、
前記飲料用濃縮原液は、エタノールと疎水性香気成分を含有しており、
前記疎水性香気成分の少なくとも一部は、前記飲料用濃縮原液に溶解しており、
25℃における720nmの吸光度が、水で6倍希釈した希釈液の5℃における720nmの吸光度よりも0.05以上小さく、
前記飲料用濃縮原液を希釈して調製された飲料では、前記飲料用濃縮原液に溶解していた前記疎水性香気成分の少なくとも一部が不溶化し、かつ、液面に疎水性の液状物が浮いていることを特徴とする、飲料用濃縮原液。 - 前記疎水性香気成分は、前記飲料用濃縮原液中に均一に存在している、請求項1に記載の飲料用濃縮原液。
- エタノール濃度が20~60容量%である、請求項1又は2に記載の飲料用濃縮原液。
- 25℃において透明である、請求項1~3のいずれか一項に記載の飲料用濃縮原液。
- 前記飲料用濃縮原液に溶解している疎水性香気成分の濃度Pc(g/100g)が、Sb×Ac/Ab[Ac(容量%)は前記飲料用濃縮液のエタノール濃度であり、Tc(℃)は前記飲料用濃縮原液の液温であり、Ab(容量%)は前記飲料用濃縮液を希釈して調製される飲料のエタノール濃度であり、Tb(℃)は前記飲料の液温である]よりも大きい、請求項1~4のいずれか一項に記載の飲料用濃縮原液。
- 25℃における420nm、530nm、又は630nmの吸光度が、それぞれ、水で6倍希釈した希釈液の5℃における420nm、530nm、又は630nmの吸光度よりも小さい、請求項1~5のいずれか一項に記載の飲料用濃縮原液。
- 前記飲料用濃縮原液には、乳化状態の疎水性香気成分も含有されている、請求項1~6のいずれか一項に記載の飲料用濃縮原液。
- 前記疎水性香気成分が、果実の香気成分である、請求項1~7のいずれか一項に記載の飲料用濃縮原液。
- 前記果実が柑橘類である、請求項8に記載の飲料用濃縮原液。
- 前記疎水性香気成分が、シトラールを含む、請求項1~9のいずれか一項に記載の飲料用濃縮原液。
- 容器内に封入されている、請求項1~10のいずれか一項に記載の飲料用濃縮原液。
- 請求項1~11のいずれか一項に記載の飲料用濃縮原液を、水又は可食性水溶液で希釈する、飲料の製造方法。
- 前記飲料用濃縮原液を、2~15倍希釈する、請求項12に記載の飲料の製造方法。
