Description
項1. チオ硫酸及び/又はその塩を含む培地で酵母を培養することを特徴とする、酵母の培養方法。
項2. 前記酵母が、エタノール産生酵母である、項1に記載の培養方法。
項3. エタノールの製造に適用される、項2に記載の培養方法。
項4. 前記培地中に含まれる硫黄源の総量当たり、チオ硫酸及び/又はその塩がモル比で1%以上である、項1〜3のいずれかに記載の培養方法。
項5. 前記培地中において、チオ硫酸及び/又はその塩が単一硫黄源である、項1〜4のいずれかに記載の培養方法。
項6. チオ硫酸及び/又はその塩を含むことを特徴とする、酵母培養用の培地。
項7. エタノール産生酵母の培養に使用される、項6に記載の培地。
項8. エタノールの製造に使用される、項7に記載の培地。

項10. チオ硫酸及び/又はその塩が単一硫黄源である、項6〜9のいずれかに記載の培地。
本発明の培養方法は、チオ硫酸及び/又はその塩を含む培地で酵母を培養することを特徴とする。以下、本発明の培養方法について説明する。
本発明の培養方法では、硫黄源としてチオ硫酸及び/又はその塩を含む培地を使用する。このように、チオ硫酸及び/又はその塩を硫黄源として使用することにより、酵母の生育を促進させ、酵母の菌体生産や酵母によるエタノール生産を効率的に行うことが可能になる。
本発明の培養方法が適用される酵母の種類については、特に制限されず、例えば、ビール、ワイン、ウイスキー、焼酎、清酒、味噌、醤油等の醸造用酵母(エタノール産生酵母を含む);パン酵母;工業用エタノールの製造に使用されるエタノール産生酵母;有機酸産生酵母;酵母エキスの原料酵母等が挙げられる。
本発明の培養方法における培養方式は、回分培養、流加培養、連続培養等のいずれで行ってもよく、使用する酵母の種類、培養目的等に応じて適宜設定すればよい。
本発明の培地は、酵母を培養するために使用される培地であって、チオ硫酸及び/又はその塩を含有することを特徴とする。本発明の培地を使用することにより、酵母の生育を促進でき、酵母の菌体生産や酵母によるエタノール生産を効率的に行うことが可能になる。
硫黄源として、チオ硫酸ナトリウム又は硫酸ナトリウムを使用し、出芽酵母の生育特性とエタノール産生能を評価した。
硫黄源として、チオ硫酸ナトリウム単独、硫酸ナトリウム単独、又はこれらの混合物を使用し、エタノール産生酵母の生育特性とエタノール産生能を評価した。本試験例2で使用したエタノール産生酵母は、前記試験例1で使用した出芽酵母(サッカロマイセス・セレビシエ)と同様である。
Claims (6)
- 0.001〜100mMのチオ硫酸及び/又はその塩を単一硫黄源として含む培地で酵母を培養することを特徴とする、酵母の培養方法。
- 前記酵母が、エタノール産生酵母である、請求項1に記載の培養方法。
- エタノールの製造に適用される、請求項2に記載の培養方法。
- 0.001〜100mMのチオ硫酸及び/又はその塩を単一硫黄源として含むことを特徴とする、酵母培養用の培地。
- エタノール産生酵母の培養に使用される、請求項4に記載の培地。
- エタノールの製造に使用される、請求項5に記載の培地。
