Description
(a)茶葉の不発酵物または半発酵物
(b)ハト麦、玄米および大麦からなる群から選ばれる穀物の焙煎物
(c)ドクダミまたはクマザサの乾燥物
(d)ゴマおよびケツメイシからなる群から選ばれる種子の焙煎物
からなる群から選ばれる植物の加工物の抽出物および香料の少なくとも1種とを配合することを特徴とする飲料である。
(a)茶葉の不発酵物または半発酵物
(b)ハト麦、玄米および大麦からなる群から選ばれる穀物の焙煎物
(c)ドクダミまたはクマザサの乾燥物
(d)ゴマおよびケツメイシからなる群から選ばれる種子の焙煎物
からなる群から選ばれる植物の加工物の抽出物および香料の少なくとも1種を配合することを特徴とする該飲料の不快臭を低減させる方法である。
水溶性(商品名:和光純薬工業株式会社製)等として市販されているので、これを利用することができる。本発明の飲料におけるコーンペプチドの含有量は、特に制限はないが、1回あたりの服用量が1〜10g、好ましくは1〜6gになる量が好ましい。
(a)茶葉の不発酵物または半発酵物
(b)ハト麦、玄米および大麦からなる群から選ばれる穀物の焙煎物
(c)ドクダミまたはクマザサの乾燥物
(d)ゴマおよびケツメイシからなる群から選ばれる種子の焙煎物
飲料の製造(1):
表1に示すBrixになるように各植物の加工物を熱水で抽出した。この抽出物にコーンペプチド水溶性(商品名:和光純薬工業株式会社製)を0.3%およびビタミンCを0.05%の濃度で添加し、攪拌した。これらをガラス容器に充填し、キャップを施し、飲料(実施品1〜11)とした。これら飲料を65℃の恒温槽にて1日保管後、専門パネル4〜5名により、下記の評価基準にて不快臭(独特の生臭さ)を評価した。結果を表1に示した。

飲料の製造(2):
精製水に、コーンペプチド 水溶性(商品名:和光純薬工業株式会社製)を0.3%および表2に示す植物の加工物の香料(フレーバー:何れも小川香料株式会社製)を0.1%の濃度で添加し、攪拌した。これらをガラス容器に充填し、キャップを施し、飲料(実施品12〜15)とした。これらを65℃の恒温槽にて1日保管後、専門パネル4名により、実施例1と同様の評価基準にて不快臭(独特の生臭さ)を評価した。結果を表2に示した。
飲料の製造(3):
精製水に、コーンペプチド 水溶性(商品名:和光純薬工業株式会社製)を0.3%の濃度で配合した水溶液に、表3に示した、他の飲料等において風味の改善効果が知られている各種成分を混合溶解し、攪拌した。これらをガラス容器に充填し、キャップを施し、飲料(比較品1〜15)とした。これら飲料を65℃の恒温槽にて1日保管後、専門パネル4名により、実施例1と同様の評価基準にて不快臭(独特の生臭さ)を評価した。結果を表3に示した。なお、各添加物の配合量は、風味改善効果が得られ、かつ飲料として適している風味となる量である。

Claims (3)
- コーンペプチドと、以下の(a)〜(d)、
(a)茶葉の不発酵物または半発酵物
(b)ハト麦、玄米および大麦からなる群から選ばれる穀物の焙煎物
(c)ドクダミまたはクマザサの乾燥物
(d)ゴマおよびケツメイシからなる群から選ばれる種子の焙煎物
からなる群から選ばれる植物の加工物の抽出物および香料の少なくとも1種とを配合することを特徴とする飲料。 - 茶様飲料である請求項1記載の飲料。
- コーンペプチドを配合した飲料において、以下の(a)〜(d)、
(a)茶葉の不発酵物または半発酵物
(b)ハト麦、玄米および大麦からなる群から選ばれる穀物の焙煎物
(c)ドクダミまたはクマザサの乾燥物
(d)ゴマおよびケツメイシからなる群から選ばれる種子の焙煎物
からなる群から選ばれる植物の加工物の抽出物および香料の少なくとも1種を配合することを特徴とする該飲料の不快臭を低減させる方法。
