Description
本出願は、2005年10月14日に出願された米国仮出願第60/727,122号(参照により本明細書に援用される)に関連し、それに由来する優先権を主張する。
(a)水不溶性材料及び約1〜約5のHLBを有する低HLB乳化剤を含む油相、
(b)水相、及び
(c)
(i)約9〜約17のHLBを有する乳化剤、及び
(ii)約6〜約8のHLBを有する乳化剤
を含む食品等級の乳化剤系
を含み、
油相は、水相内で約300nm未満の平均直径を有する粒子として分散される、食品及び飲料組成物へ親油性水不溶性材料を組み込むのに使用されるマイクロエマルションに関する。
(a)親油性水不溶性構成成分を低HLB乳化剤と混合する工程であって、それにより油相を形成する、混合する工程、
(b)乳化剤系を油相へ混合する工程、及び
(c)水相を上記工程(b)の生成物へ添加すると共に混合する工程であって、それによりマイクロエマルションを形成する、添加すると共に混合する工程
を含む、上記で規定されるマイクロエマルションを調製する方法に関する。
下記事項は、本発明のβ−カロテン水中油型マイクロエマルションの調製の例である。マイクロエマルションは、下記組成を有する:
Claims (16)
- 食品及び飲料組成物へ親油性水不溶性材料を組み込むのに使用されるマイクロエマルションであって、
(a)前記水不溶性材料及び1〜5のHLBを有する低HLB乳化剤を含む油相であって、当該低HLB乳化剤が脂肪酸のグリセロールエステル、モノグリセリド、ジグリセリド、エトキシル化モノグリセリド、脂肪酸のポリグリセロールエステル、レシチン、脂肪酸のグリセロールエステル、脂肪酸のソルビタンエステル、脂肪酸のスクロースエステル、及びそれらの混合物から選択される、油相、
(b)水相、及び
(c)
(i)モノグリセリド及びジグリセリドの酢酸エステル、モノグリセリド及びジグリセリドの乳酸エステル、モノグリセリド及びジグリセリドのコハク酸エステル、モノグリセリド及びジグリセリドのジアセチル酒石酸エステル、ポリソルビタンエステル、脂肪酸のポリグリセロールエステル、レシチン、脂肪酸のスクロースエステル、並びにそれらの混合物から選択される、10〜16のHLBを有する高HLB乳化剤、及び
(ii)モノグリセリド、ジグリセリド、エトキシル化モノグリセリド、脂肪酸のソルビタンエステル、モノグリセリド及びジグリセリドのリン酸エステル、脂肪酸のポリグリセロールエステル、レシチン、脂肪酸のスクロースエステル、及びそれらの混合物から選択される、6〜8のHLBを有する中HLB乳化剤を含む食品等級の乳化剤系を含み、
前記油相は、前記水相内で平均直径1〜300nmを有する粒子として分散され、
前記マイクロエマルションが全体の50%〜90%で水相を含み、その残余は、油相及び食品等級の乳化剤系であり、そのうち該油相は、全体の1%〜15%を構成し、
前記マイクロエマルションが前記低HLB乳化剤0.1%〜5%、前記高HLB乳化剤5%〜25%、及び前記中HLB乳化剤0.1%〜5%を含み、
前記水相が、着色料、ビタミン、ジュース、酸化防止剤、天然構成成分の抽出物、薬剤、単純フェノール、ポリフェノール、バイオフラボノイド、乳製品、タンパク質、ペプチド、塩、糖、甘味料、香味料、香味前駆物質、栄養剤、ミネラル、酸及び調味料、並びにそれらの混合物から選択される溶解された材料を含有し得る、マイクロエマルション。 - 前記低HLB乳化剤は、グリセロールモノオレエート、ポリグリセロールリシノレエート、デカグリセロールデカオレエート、スクロースエルケート、及びスクロースオレエートから選択され、
前記中HLB乳化剤は、ポリグリセロールエステル、トリグリセロールモノ脂肪酸、及びスクロースステアレートから選択され、
前記高HLB乳化剤は、ポリソルベート80、ポリオキシソルビタンモノラウレート、ポリグリセロール−6−ラウレート、デカグリセロールラウリン酸エステル、デカグリセロールオレイン酸エステル、及びスクロースエステルから選択される、請求項1に記載のマイクロエマルション。 - 前記低HLB乳化剤は、グリセロールモノオレエート、ポリグリセロールリシノレエート、デカグリセロールデカオレエート、スクロースエルケート、スクロースオレエート、及びそれらの混合物から選択され、
前記中HLB乳化剤は、デカグリセロールヘキサオレエート、トリグリセロールモノオレエート、スクロースステアレート、及びそれらの混合物から選択され、
前記高HLB乳化剤は、ポリソルベート80、ポリオキシソルビタンモノラウレート、ポリグリセロール−6−ラウレート、デカグリセロールラウリン酸エステル、デカグリセロールオレイン酸エステル、及びそれらの混合物から選択される、請求項1に記載のマイクロエマルション。 - 前記水不溶性材料は、カロテノイド及びそれらの誘導体、精油、食用油、脂肪酸、タンパク質及びペプチド、ポリ不飽和脂肪酸及びそれらのエステル、ビタミンA及びその誘導体、ビタミンE及びその誘導体、ビタミンD及びその誘導体、ビタミンK及びその誘導体、着色料、香味料、栄養剤、栄養補助食品、治療剤、酸化防止剤、天然構成成分の抽出物、薬剤、防腐剤、リポ酸、フィトステリン、ケルセチン、フィトステロール及びそれらのエステル、補酵素Q10(ユビデカレノン)、植物イソフラボン、並びにそれらの混合物から選択される、請求項1に記載のマイクロエマルション。
- 前記マイクロエマルションで使用される前記乳化剤は、モノグリセロールオレエート、ポリソルベート80及びポリグリセロールエステルを含む、請求項1に記載のマイクロエマルション。
- (a)前記親油性水不溶性構成成分を前記低HLB乳化剤と混合する工程であって、それにより前記油相を形成する、混合する工程、
(b)前記乳化剤系を前記油相へ混合する工程、及び
(c)前記水相を前記工程(b)の生成物へ添加すると共に混合する工程であって、それにより前記マイクロエマルションを形成する、添加すると共に混合する工程
を含む、請求項1に記載のマイクロエマルションを調製する方法。 - 食品及び飲料組成物へ水溶性材料を組み込むのに使用されるマイクロエマルションであって、
(a)前記水溶性材料及び9〜17のHLBを有する高HLB乳化剤を含む水相であって、当該高HLB乳化剤がモノグリセリド及びジグリセリドの酢酸エステル、モノグリセリド及びジグリセリドの乳酸エステル、モノグリセリド及びジグリセリドのコハク酸エステル、モノグリセリド及びジグリセリドのジアセチル酒石酸エステル、ポリソルビタンエステル、脂肪酸のポリグリセロールエステル、レシチン、脂肪酸のスクロースエステル、並びにそれらの混合物から選択される、水相
(b)油相、及び
(c)
(i)脂肪酸のグリセロールエステル、モノグリセリド、ジグリセリド、エトキシル化モノグリセリド、脂肪酸のポリグリセロールエステル、レシチン、脂肪酸のグリセロールエステル、脂肪酸のソルビタンエステル、脂肪酸のスクロースエステル、及びそれらの混合物から選択される、1〜5のHLBを有する低HLB乳化剤、及び
(ii)モノグリセリド、ジグリセリド、エトキシル化モノグリセリド、脂肪酸のソルビタンエステル、モノグリセリド及びジグリセリドのリン酸エステル、脂肪酸のポリグリセロールエステル、レシチン、脂肪酸のスクロースエステル、及びそれらの混合物から選択される、6〜8のHLBを有する中HLB乳化剤
を含む食品等級の乳化剤系を含み、
前記水相は、前記油相内で平均直径1〜300nmを有する粒子として分散され、
前記マイクロエマルションが全体の50%〜90%で油相を含み、その残余は、水相及び食品等級の乳化剤系であり、そのうち該水相は、全体の約1%〜約15%を構成し、その残余は、油相及び食品等級の乳化剤系であり、
前記マイクロエマルションが前記高HLB乳化剤0.1%〜5%、前記中HLB乳化剤0.1%〜5%、及び前記低HLB乳化剤5%〜30%を含んでいる、マイクロエマルション。 - 前記低HLB乳化剤は、グリセロールモノオレエート、ポリグリセロールリシノレエート、デカグリセロールデカオレエート、スクロースエルケート、及びスクロースオレエートから選択され、
前記中HLB乳化剤は、ポリグリセロールエステル、トリグリセロールモノ脂肪酸、及びスクロースステアレートから選択され、
前記高HLB乳化剤は、ポリソルベート80、ポリオキシソルビタンモノラウレート、ポリグリセロール−6−ラウレート、デカグリセロールラウリン酸エステル、デカグリセロールオレイン酸エステル、及びスクロースエステルから選択される、請求項7に記載のマイクロエマルション。 - 前記低HLB乳化剤は、グリセロールモノオレエート、ポリグリセロールリシノレエート、デカグリセロールデカオレエート、スクロースエルケート、スクロースオレエート、及びそれらの混合物から選択され、
前記中HLB乳化剤は、デカグリセロールヘキサオレエート、トリグリセロールモノオレエート、スクロースステアレート、及びそれらの混合物から選択され、
前記高HLB乳化剤は、ポリソルベート80、ポリオキシソルビタンモノラウレート、ポリグリセロール−6−ラウレート、デカグリセロールラウリン酸エステル、デカグリセロールオレイン酸エステル、スクロースエステル、及びそれらの混合物から選択される、請求項7に記載のマイクロエマルション。 - 前記油相は、カロテノイド及びそれらの誘導体、精油、食用油、脂肪酸、タンパク質及びペプチド、ポリ不飽和脂肪酸及びそれらのエステル、ビタミンA及びその誘導体、ビタミンE及びその誘導体、ビタミンD及びその誘導体、ビタミンK及びその誘導体、着色料、香味料、栄養剤、栄養補助食品、治療剤、酸化防止剤、天然構成成分の抽出物、薬剤、防腐剤、リポ酸、フィトステリン、ケルセチン、フィトステロール及びそれらのエステル、補酵素Q10(ユビデカレノン)、植物イソフラボン、並びにそれらの混合物から選択される溶解された材料を含む、請求項7に記載のマイクロエマルション。
- 食品添加物、食品防腐剤、食品サプリメント、酸化防止剤、栄養補助食品、植物抽出物、薬剤、脂肪酸、ペプチド、タンパク質、炭水化物、塩、天然香味料、合成香味料、着色剤、ビタミン及びそれらの混合物から選択される、請求項7に記載のマイクロエマルション。
- (a)前記水溶性材料構成成分を前記高HLB乳化剤と混合する工程であって、それにより前記水相を形成する、混合する工程、
(b)前記乳化剤系を前記水相へ混合する工程、及び
(c)前記油相を前記工程(b)の生成物へ添加すると共に混合する工程であって、それにより前記マイクロエマルションを形成する、添加すると共に混合する工程
を含む、請求項7に記載のマイクロエマルションを調製する方法。 - 食品又は飲料製品で使用するための水中油型マイクロエマルションを形成するのに使用される濃縮物であって、
(a)前記食品又は飲料製品へ組み込まれるべき親油性構成成分を含有する分散される油相1%〜40%、
(b)1〜5のHLBを有する食品等級の、請求項1に記載の低HLB乳化剤1%〜10%、
(c)6〜8のHLBを有する食品等級の、請求項1に記載の中HLB乳化剤1%〜10%、及び
(d)10〜16のHLBを有する食品等級の、請求項1に記載の高HLB乳化剤65%〜95%
を含む、濃縮物。 - 油脂製品で使用するための油中水型マイクロエマルションを形成するのに使用される濃縮物であって、
(a)前記油脂製品へ組み込まれるべき構成成分を含有する分散される水相1%〜40%、
(b)1〜5のHLBを有する食品等級の、請求項7に記載の低HLB乳化剤65%〜95%、
(c)6〜8のHLBを有する食品等級の、請求項7に記載の中HLB乳化剤1%〜10%、及び
(d)9〜17のHLBを有する食品等級の、請求項7に記載の高HLB乳化剤1%〜10%
を含む、濃縮物。 - 請求項1〜5及び7〜10の何れか一項に記載のマイクロエマルションを含む、食品又は飲料組成物。
- 請求項13又は14に記載の濃縮物を使用して調製される食品又は飲料組成物。
