Description
[1]
乳化剤、安定剤、卵成分を配合しないことを特徴とする、タンパク質原料、脂肪原料、糖類を含み、タンパク質と脂肪の混合割合(質量比)が、脂肪/タンパク質が1.3以下である、耐チャーニング性を有するソフトクリームミックス。
[2]
タンパク質と脂肪の混合割合(質量比)が、脂肪/タンパク質が1.0〜1.3である[1]に記載のソフトクリームミックス。
[3]
タンパク質原料が脱脂粉乳及び/又は脱脂濃縮乳である[1]又は[2]に記載のソフトクリームミックス。
[4]
脂肪原料がバター及び/又はクリームである[1]〜[3]のいずれかに記載のソフトクリームミックス。
1)試料の調製
グラニュー糖8.25%、粉アメ5%を使用し、脱脂粉乳、バター(食塩無添加)、乳糖の量を次の表1のように変え、ソフトミックスを製造した。
調製したソフトミックス試料を、サンヨー社製ソフトクリームフリーザー(SSF-M402PK)に投入し、フリージング開始から5時間後にサンプリングし、セジメント、食感、チャーニング耐性を評価した。
なお、セジメントには、ミックスを4g採り、イオン交換水にて40gにメスアップ(10倍希釈)したものを作成し、そのうち30gを使用した。
セジメントの評価と判定は、セジメントディスクに残った固形物残渣の程度を目視によって確認して5段階で評価し、評価段階1〜3を「×」(不可:固形物残渣が明らかに見られる)、評価段階4を「△」(可:固形物残渣は問題にならない)、評価段階5を「○」(良好:固形物残渣が見られない)と判定した。この評価と判定をセジメント写真と対応させて、次の表2に示す。
試験結果を、次の表3に示す。
Claims (2)
- 乳化剤、安定剤、及び卵成分のいずれも配合することなく、脱脂粉乳、バター、糖類を、タンパク質と脂肪の混合割合(質量比)が、脂肪/タンパク質が1.0となるように混合して含ませて、耐チャーニング性を有するソフトクリームミックスを、製造する方法。
- 請求項1に記載の方法によって製造された、乳化剤、安定剤、及び卵成分のいずれも配合されない、脱脂粉乳、バター、糖類を含む、タンパク質と脂肪の混合割合(質量比)が、脂肪/タンパク質が1.0である、ソフトクリームミックス。
