1.実質的にコレステロールを含まず、少なくとも約99%あるいはそれ以上、コレステロールが含まれていない;
2.全卵よりも低い脂肪含有量で調製することができる;
3.冷水の添加により直ちに再水和する乾燥製品として提供されるが、冷蔵または冷凍の液状製品としても提供することができる;
4.冷蔵庫または冷凍庫での保存の必要がなく、乾燥形態で貯蔵寿命が長い;
5.例えば、オムレツ、キッシュなどの食物調製品に、例えば、マフィンおよびケーキなどのベーカリー製品に、カスタードおよび他のデザートに、マヨネーズなどに用いることができる;
6.新鮮な卵よりもコストが低い;
7.適切にバランスの取れた食事の一部として、血清コレステロール値の低減をもたらすことができる;および
8.全卵と同様の栄養組成を有する。
本発明を、ここに、以下の非限定的な実施例を参照しながら説明する:
(b)以下に示す成分を用いて、実施例2の手順を繰り返した。
(a)引き続いて使用するために、清潔な容器中に4℃で保存した−典型的な冷蔵保存寿命は約20日である;または:
(b)正味120gのプラスチック袋に詰め、熱密封し、急速冷凍した。この袋を−20℃で保存したところ、当該条件下で、12ヶ月を超える保存寿命を有した。
冷蔵液状製品または解凍した冷凍製品のいずれも、食物調製品において全卵の代替物として用いることができるが、コレステロールを含まないという独特の特徴を提供する。
上述した機械的処理またはホモジナイズ工程は、PSM、大豆濃縮物または大豆単離物を粒子化して口当たりを滑らかにするのを助けるが、より優れた結果が、油および乾燥大豆成分の混合物を実施例1に記載の微細化方法に供し、次いで微細化物を液状卵白と混合し、次いでこうして得られた製品をホモジナイズする方法により得られる。
Claims (28)
- 大豆タンパク質含有成分および卵白を含む卵様食物製品であって、該製品の平均粒径が約100ミクロン未満であり、該大豆タンパク質含有成分が、該卵様製品に対して少なくとも10重量%存在する、卵様食物製品。
- 大豆タンパク質含有成分および卵白成分が、重量比で約1:10〜約2:1の範囲にある混合物を含む、請求項1に記載の卵様食物製品。
- 水和可能な乾燥調製品の形態である、請求項1に記載の卵様食物製品。
- 液状調製品の形態である、請求項1に記載の卵様食物製品。
- 該製品が、卵白成分および大豆タンパク質含有成分を共に微細化用ローラーミルを用いて混合することにより製造される、請求項1に記載の卵様食物製品。
- 微細化用ローラーミルが3ロールミルである、請求項5に記載の卵様食物製品。
- 該製品が約50ミクロン未満の平均粒径を有する、請求項1に記載の卵様食物製品。
- 大豆タンパク質含有成分がPSMである、請求項1に記載の卵様食物製品。
- 大豆タンパク質含有成分が、製品の約15重量%〜約50重量%存在する、請求項3に記載の卵様食物製品。
- 卵白成分が、約25重量%〜約45重量%の範囲の量で存在する、請求項4に記載の卵様食物製品。
- 卵白成分が、製品の約10重量%〜約90重量%の量で存在する、請求項4に記載の卵様食物製品。
- 卵白成分が、製品の約40重量%〜約80重量%存在する、請求項11に記載の卵様食物製品。
- 卵白成分が、製品の約50重量%〜約70重量%存在する、請求項12に記載の卵様食物製品。
- 植物油が付加的に存在する、請求項1に記載の卵様食物製品。
- 脂肪の含有量が2%〜約35%の範囲にある、請求項1に記載の卵様食物製品。
- 脂肪の含有量が組成物の約4重量%〜約10重量%の範囲にある、請求項1に記載の卵様食物製品。
- 脂肪の含有量が組成物の約5重量%〜約9重量%の範囲にある、請求項1に記載の卵様食物製品。
- 乾燥大豆タンパク質含有成分、液状卵白成分および植物油を含む卵様食物製品であって、
(a)大豆タンパク質含有成分および植物油を混合して混合物を製造し、これを必要に応じてローラーミル中で微細化する、
(b)工程(a)の製品を、液状卵白成分と混合する、および
(c)引き続いて、工程(b)の製品をホモジナイズする
ことにより製造され、
該ホモジナイズされた製品の平均粒径が約100ミクロン未満であり、該大豆タンパク質が製品の少なくとも10重量%存在し、大豆タンパク質、卵白成分および植物油が、天然の卵の香味、食感および風味を該卵様製品に付与するのに有効な量で存在し、かつ、該脂肪含有量が、天然の卵の脂肪含有量未満である、該卵様食物製品。 - 卵様食物製品の製造方法であって、大豆タンパク質を、卵白と、必要に応じて1つ以上の脂肪と混合すること、および乾燥した混合物をローラーミル中での機械的処理に供して、粒子の平均粒径を約100ミクロン未満まで低減することを含み、該大豆タンパク質が、製品の少なくとも10重量%存在する、該製造方法。
- 大豆タンパク質を、1つ以上の脂肪の存在下で乾燥卵白と混合して、クラム様混合物を製造し、その後、該混合物を機械的に微細化する、請求項19に記載の製造方法。
- 大豆製品を、脂肪の存在下で液状卵白と混合する、請求項19に記載の製造方法。
- 脂肪が植物油である、請求項21に記載の製造方法。
- 大豆含有成分が大豆粉である、請求項19に記載の製造方法。
- 大豆含有成分がPSMである、請求項19に記載の製造方法。
- このようにして得た製品をホモジナイズまたは殺菌する、請求項19に記載の製造方法。
- 請求項1記載の卵様製品を含む、可食性食物組成物。
- 調理済みもしくは焼き製品、つなぎ、ドレッシング、マヨネーズ、スプレッド、サラダドレッシング、オムレツ、ゆで卵、ポーチドエッグ、スクランブルエッグ、卵焼き、飲料または栄養製品もしくはサプリメントである、請求項26の可食性食物組成物。
- 卵様食物製品が、必要に応じて、矯味矯臭剤、着色剤、ビタミンおよび/またはミネラル、pH調整剤、自由流動化剤、甘味料および/または栄養サプリメントを含む、請求項1記載の卵様食物製品。
