Abstract

1466881 Volatile aromatic distillates from coffee &c GENERAL FOODS Ltd 24 Sept 1974 [1 Oct 1973] 45861/73 Heading A2B Volatile aqueous aromatic distillates are produced from aroma bearing substances, e.g. roasted and ground coffee by passing the substance through a closed cylindrical vessel fitted with a helical screw conveyor and passing vacuum steam countercurrent thereto. In the case of coffee, the vacuum is preferably 15 to 25 ins. Hg. and residence time of the coffee 1 to 5 mins. 10 ml. or less of distillate per 1b. of coffee is produced. The distillate is subsequently added to a coffee extract which may be freeze-dried.
