Abstract
1465168 Improving coffee UNILEVER Ltd 30 May 1974 [1 June 1973] 23948/74 Heading A2B An aqueous extract of coffee, or a solution of instant coffee is treated with a peroxide e.g. hydrogen peroxide in the presence of a peroxidase enzyme e.g. from horseradish. The H 2 O 2 may be present in the range 0.5 to 2.5 millimoles per gm of coffee solids, the pH of the aqueous coffee 4.5 to 9, the temperature 5 to 60‹C, the amount of peroxidase 10 to 200 enzyme units per gm. of coffee solids, and the aqueous coffee contains 5 to 30% coffee solids. The amount of peroxide is such that no excess peroxide remains after treatment. The enzyme may be supported on a solid support e.g. glass or polymer and the aqueous coffee passed over it. The treated aqueous coffee is dried to form an instant coffee. The treatment removes chlorogenic acids from the coffee to give a product having a flavour reminiscent of mocha coffee and a darkened colour.
