Extrait hydrosoluble et procédé d’obtention à partir de cuticules d’insectes La présente invention concerne un extrait hydrosoluble issu d’insectes, ainsi que son procédé d’obtention. Cet extrait hydrosoluble comprend entre 13 % et 30 % en poids sec de protéines présentant une taille comprise dans la gamme ]555 ; 1400] Daltons, sur le poids sec total de protéines de l’extrait hydrosoluble, et présente une teneur en chitine comprise entre 0,5 % et 6 % en poids sec, sur le poids sec total de l’extrait hydrosoluble.
