PROCEDIMIENTO PARA LA PRODUCCION DE ENZIMA DE FRUCTOSIL TRANSFERASA POR LEVADURA NEGRA "AUREOBASIDIUM PULLULANS". SE INOCULA UN MEDIO DE CULTIVO CON CELULAS DE UNA CEPA DE "AUREOBASIDIUM PULLULANS". ESTE MEDIO DE CULTIVO ESTA COMPUESTO DE 16 A 24 POR 100 EN VOLUMEN DE SUCROSA, DE 1 A 2,4 POR 100 EN VOLUMEN DE EXTRACTO DE LEVADURA O SU EQUIVALENTE NUTRITIVO Y UN 1 POR 100 EN VOLUMEN APROXIMADAMENTE DE UNA SAL DE NITRATO ORGANICO. LA MEZCLA SE CULTIVA A UN PH DE 6 A 8, A UNA TEMPERATURA DE 28 A 32 C. HASTA OBTENER UN RENDIMIENTO DE ENZIMA DE FRUCTOSIL TRANSFERASA. LA PREPARACION ENZIMATICA SE RECUPERA DEL MEDIO DE CULTIVO SIN NECESIDAD DE ELIMINAR NINGUN PIGMENTO NEGRO O POLISACARIDO VISCOSO. SE UTILIZA PARA PREPARAR JARABES DE FRUCTOSA.
