Abstract
Procedimiento para la recuperación de proteínas del suero lácteo, caracterizado porque se somete un suero lácteo a un tratamiento térmico que permite una desnaturalización de las proteínas que contiene y luego se separan éstas de los otros constituyentes no grasos del suero lácteo por ultrafiltración.
