Claims (15)

  1. Dispositif de coupe, en particulier trancheuse à haute performance, pour couper en continu des produits (10), en particulier des produits alimentaires, comportant
    au moins une unité de coupe (18) pourvue en particulier d'un couteau circulaire ou en forme de faucille et destinée à séparer des tranches de produit, un dispositif d'alimentation (8) pour amener en plusieurs traces des produits (10) jusqu'à l'unité de coupe (18), et
    un dispositif d'évacuation (34) pour évacuer des portions (38) qui comprennent chacune au moins une tranche de produit séparée,
    le dispositif d'alimentation (8) comprenant un dispositif de chargement (12) réalisé pour recevoir au moins un produit (10) et déplaçable dans son ensemble entre une position de chargement et une position d'alimentation, caractérisé par
    au moins un dispositif de convoyage (14) qui, vu en direction d'alimentation (Z), est agencé en aval du dispositif de chargement (12) et qui présente au moins deux traces de convoyage (22, 26), et
    un dispositif de commande qui est réalisé pour commander les traces de convoyage (22, 26) indépendamment les unes des autres de telle sorte que des portions (38) sont générées en continu du fait que la séparation de tranches de produit est interrompue dans une trace de convoyage (22, 26) et que, en particulier approximativement en même temps, la séparation de tranches de produit est démarrée dans une autre trace de convoyage (26, 22).

    le dispositif de chargement (12) comprend plusieurs traces de chargement (22', 26'), le nombre de traces de chargement (22', 26') correspondant au nombre de traces de convoyage (22, 26), et en particulier les traces de chargement (22', 26') pouvant être commandées indépendamment les unes des autres.
  5. Dispositif de coupe selon la revendication 1 ou 2,
    caractérisé en ce que
    le dispositif de chargement (12) comprend une unique trace de chargement qui est déplaçable transversalement à la direction d'alimentation (Z).
  6. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que
    le dispositif de convoyage (14) comprend des surfaces de glissement, des bandes de convoyage passives et/ou des bandes de convoyage actives (16), et en particulier un porte-produit (28) est prévu pour chaque trace de convoyage (22, 26).
  7. Dispositif de coupe selon l'une des revendications précédentes,
    caractérisé en ce que
    en direction d'alimentation (Z), le dispositif de convoyage (14) présente une longueur inférieure à celle du dispositif de chargement (12).
  8. Dispositif de coupe selon l'une des revendications précédentes,
    caractérisé en ce que
    le dispositif d'évacuation (34) comprend un dispositif d'élimination (42) à plusieurs traces d'évacuation (43), le nombre de traces d'évacuation (43) correspondant au nombre de traces de convoyage (22, 26) et les traces d'évacuation (43) pouvant être commandées indépendamment les unes des autres.
  9. Dispositif de coupe selon l'une des revendications précédentes,
    caractérisé en ce que
    le dispositif d'évacuation (34) comprend un moyen de répartition (48) réalisé pour regrouper des portions (38) en provenance de différentes traces de convoyage (22, 26).
  10. Procédé pour couper en continu des produits (10), en particulier des produits alimentaires, à l'aide d'un dispositif de coupe, en particulier à l'aide d'une trancheuse à haute performance, comportant au moins une unité de coupe (18), pourvue en particulier d'un couteau circulaire ou en forme de faucille et destinée à séparer des tranches de produit,
    un dispositif d'alimentation (8) pour amener en plusieurs traces des produits (10) jusqu'à l'unité de coupe (18), et
    un dispositif d'évacuation (34) pour évacuer des portions (38) qui comprennent chacune au moins une tranche de produit séparée,
    le dispositif d'alimentation (8) comprenant un dispositif de chargement (12) réalisé pour recevoir au moins un produit (10) et déplaçable dans son ensemble entre une position de chargement et une position d'alimentation, caractérisé en ce que
    le dispositif d'alimentation (8) comprend en outre au moins un dispositif de convoyage (14) qui, vu en direction d'alimentation (Z), est agencé en aval du dispositif de chargement (12) et qui présente au moins deux traces de convoyage (22, 26), et
    un dispositif de commande qui est réalisé pour commander les traces de convoyage (22, 26) indépendamment les unes des autres de telle sorte que des portions (38) sont générées en continu du fait que la séparation de tranches de produit est interrompue dans une trace de convoyage (22, 26) et, en particulier approximativement en même temps, la séparation de tranches de produit est démarrée dans une autre trace de convoyage (26, 22), et
    en ce que le procédé comprend les étapes suivantes consistant à :
    - alimenter un premier produit (20) sur une première trace de convoyage (22),
    - déplacer le dispositif de chargement (12) jusque dans la position de chargement lorsque le premier produit (20) a quitté au moins sensiblement la zone du dispositif de chargement (12),
    - charger le dispositif de chargement (12) avec au moins un second ou un autre produit (24),
    - déplacer le dispositif de chargement (12) jusque dans la position d'alimentation, et
    - amener le second ou l'autre produit (24) sur une seconde ou une autre trace de convoyage (26).
  11. Procédé selon la revendication 10,
    caractérisé en ce que
    le chargement d'un dispositif de chargement (12) comprenant plusieurs traces de chargement (22', 26') avec le second ou l'autre produit (24) s'effectue dans une trace de chargement (26') qui se distingue de la trace de chargement (22') du premier produit (20).
  12. Procédé selon la revendication 10,
    caractérisé en ce que
    après le chargement d'un dispositif de chargement (12) comprenant une unique trace de chargement (22'), celui-ci est déplacé transversalement à la direction d'alimentation (Z) de telle sorte que le second produit (24) parvient vers la seconde ou l'autre trace de convoyage (26).
  13. Procédé selon la revendication 10 ou 11,
    caractérisé en ce que
    le dispositif de chargement qui comprend en particulier plusieurs traces de chargement (22', 26') est chargé avec au moins deux produits (10) et est déplacé jusque dans la position d'alimentation, et tout d'abord un produit (10) est coupé avant de démarrer la séparation des tranches de produit de l'autre produit (10), et le dispositif de chargement (12) est déplacé jusque dans la position de chargement lorsque l'autre produit (10) a quitté au moins sensiblement la zone du dispositif de chargement (12).
  14. Procédé selon l'une des revendications 10 à 13,
    caractérisé en ce que
    l'entame du second ou de l'autre produit (24) est séparée en particulier au moyen de l'unité de coupe (18) avant que le premier produit (20) ne soit complètement coupé, et en particulier des copeaux de produit (40) se formant lors de la séparation de l'entame du produit sont éliminés en traces individuelles hors du dispositif d'évacuation (34) par un dispositif d'élimination (42).
  15. Procédé selon l'une des revendications 10 à 14,
    caractérisé en ce que
    des portions (38) en provenance de différentes traces de convoyage (22, 26) sont regroupées à l'aide d'un moyen de répartition (48).
