    - a cutting tool (10) movable relative to the frame (1) at least in the cutting area (4), in a reciprocating movement in a cutting plane (C),
    characterised in that:
    - it comprises an additional cutting tool (11) fixed relative to the frame (1) which is located under the chute (5), being positioned opposite said chute (5) with respect to the movable cutting tool (10), and which comprises at least one cutting member (13) located in the cutting area (4) opposite the chute (5), and having at least one cutting edge (14) facing the chute (5),
    - the movable cutting tool (10) is located between the chute (5) and the fixed additional cutting tool (11) and comprises at least:
    -- a main cutting edge (28) which is located in the cutting plane (C), and which moves alternately in a working direction (F1) and in a return direction (F2),
    -- and a presser shoe (29) which is derived from the main cutting edge (28) and arranged on the side of the additional cutting tool (11), and which has a bevel (30) inclined from the main cutting edge (28) in a direction opposite to the working direction (F1),
    - the fixed additional cutting tool (11) comprises a bearing stop (71) for an item of food that extends transversely to the cutting plane (C) and is situated substantially opposite the main cutting edge (28),
    - the stop (71) being able to move between a working position (T) in which the stop (71) is opposite the main cutting edge (28) and a retracted position (A) in which the stop (71) is retracted below the cutting plane (C),
    - the stop (71) comprising a plate extending below the cutting plane (C).
  2. Food cutting appliance according to claim 1, characterised in that the stop (71) is controlled in the extension position by elastic return means (72).
  3. Food cutting appliance according to claim 2, characterised in that the elastic return means (72) are disposed below the plate.
  4. Food cutting appliance according to claims 1 to 3, characterised in that the movement of the movable cutting tool (10) is a rectilinear translation movement between:
    - a rest position (R), in which the main cutting edge (28) is upstream from the cutting area (4) with reference to the working direction (F1),
    - and an extension position (E), in which the main cutting edge (28) is downstream from the cutting area (4) with reference to the working direction (F1).
  5. Food cutting appliance according to claims 1 to 4, characterised in that the thickness (h) of the presser shoe (29), measured between the cutting plane (C) and the end of the inclined surface opposite the main cutting edge (28), is greater than or equal to 4 mm.
  6. Food cutting appliance according to one of claims 1 to 5, characterised in that the presser shoe (29) has in the extension of the bevel (30) a heel (31) substantially parallel to the cutting plane (C).
  7. Food cutting appliance according to one of claims 1 to 6, characterised in that the movable cutting tool (10) comprises a second main cutting edge (75) substantially parallel to the cutting plane (C) and arranged to work in the return direction, said second main cutting edge (75) being associated with another presser shoe (76).
  8. Food cutting appliance according to one of claims 1 to 7, characterised in that the fixed additional cutting tool (11) comprises a first series of cutting members (13) substantially parallel to each other and forming an angle with the direction of movement of the movable cutting tool (10).
  9. Food cutting appliance according to claim 8, characterised in that the fixed additional cutting tool (11) comprises a second series of other cutting members (73) substantially parallel to each other, the first series of cutting members (13) and the second series of other cutting members (73) defining a cutting grid (17).
  10. Food cutting appliance according to one of claims 1 to 9, characterised in that the movable cutting tool (10) comprises at least one secondary cutting blade (80) which is substantially perpendicular to the main cutting edge (28) and substantially parallel to the extension direction of the chute (5).
  11. Food cutting appliance according to one of claims 1 to 10, characterised in that the fixed additional cutting tool (11) and the movable cutting tool (10) are connected to each other by a sliding connection providing the guidance of the movable cutting tool (10) during its alternating movements.
  12. Food cutting appliance according to claim 11, characterised in that the fixed additional cutting tool (11) and the movable cutting tool (10) are fastened together and form an assembly removably adapted on the frame (1).
  13. Food cutting appliance according to one of claims 1 to 12, characterised in that it comprises motorised actuating means (36) comprising an additional drive member (37) of a coupling member (35) of the movable cutting tool (10).
  14. Food cutting device according to claim 13, characterised in that it comprises means (90) for identifying the additional cutting tool (11) and in that the motorised actuating means (36) are adapted to modify their operating speed according to the identification of the additional cutting tool (11).
