Description
von 1 bis 13 :1. Der Zucker besteht im wesentlichen aus
Dextrose und Fructose, die 70 bis 100% des Gesamtzukkergehalies ausmachen. Der Fructosegehalt kann 10 bis
30% des Zuckergehaltes betragen. Ferner werden herkömmliche Bestandteile, wie z. B. Ketchup (oder andere 40
Tomatenprodukte), Meerrettich, Salz und Geschmacksstoff zugegeben.
z. B. Saccharose. Die Cocktail-Soße wird hergestellt indem man die Bestandteile (1) bis (8) zusammen vermischt, bis sich eine gleichmäßige Masse ergeben hat
Dann wird das Gemisch auf 71°C erhitzt und auf dieser
Tem peratur gehalten, während man 10 Minuten lang bei 65
einer mittleren Geschwindigkeit die Dextrose (9) und
den Sirup (10) einmischt Drei Teile Soße auf einen Teil
