Abstract
Proceso para el tratamiento térmico y continuo de productos orgánicos a base de una enzimatización y pasteurización dentro de un medio líquido en flujo continuo, que comprende las fases de:- alimentar un sistema continuo de producto orgánico a pasteurizar con trozos o porciones grandes del mismo (manual o automáticamente); - precalentar dicho producto para un tratamiento enzimático inyectando vapor vivo, exterior (indirecta);- calentar y pasteurizar dicho producto enzimático a base de una segunda inyección de vapor vivo, exterior (indirecto);- separación y regulación de entrega de producto sólido con escurrido, - tratamiento final del medio líquido remanente y bombeado para filtrado recirculación y ajuste de parámetros en el mismo. Proceso según la reivindicación 1 en el cual el producto durante el tratamiento enzimático es precalentado en una cámara con inyección moderada de vapor vivo entre 37 y 50°C, para un tiempo entre 5 hasta 20 minutos según se requiera. Proceso según la reivindicación 1 en el cual el producto enzimatizado pasa a una etapa de pasteurización con inyección fuerte de vapor vivo entre 80 y 98°C. Process according to claim 1 in which the enzymatic product passes to a pasteurization stage with strong injection of live steam between 80 and 98 ° C.
