Abstract
Polvo de proteína a base de grano usado de fermentación y métodos relacionados para uso en la producción de productos alimenticios mejorados en proteína. Los polvos de proteína a base de grano usado de fermentación tienen propiedades benéficas incluyendo bajo contenido de ácido fítico, alto valor PDCAAS y retención de propiedades antioxidantes significativas. Los polvos de proteína a base de grano usado de fermentación son altamente solubles y por lo tanto, son fácilmente humectantes, fácilmente dispersables y mezclables en concentraciones de hasta 50% en peos.
