Abstract
The invention provides a lotus leaf sport type beverage and a preparation method thereof, belonging to the technical field of food and beverage. The lotus leaf sport beverage comprises, by mass, 0.02% -0.2% of acidity regulator, 0.02% -0.2% of electrolyte, 0.01% -0.1% of vitamin C, 0.0001% -0.001% of vitamin B6, 4% -10% of white granulated sugar, 0.1% -1% of maltodextrin and the balance of lotus leaf extract; the lotus leaf extract is prepared by mixing lotus leaf powder and water according to a mass ratio of 1: extracting at the extraction temperature of 80 ℃ for 30min under reflux with hot water, filtering to obtain filtrate, weighing, adding citric acid, white granulated sugar, maltodextrin, sodium citrate, potassium chloride, taurine, vitamin C and vitamin B6 into a blending tank, and performing constant volume, filtration and sterilization with folium Nelumbinis extract to obtain the final product. The invention has the advantages of reducing fat and losing weight, resisting fatigue after exercise and the like.
Description
Technical Field
The invention belongs to the technical field of food and beverage, and relates to a lotus leaf sport type beverage and a preparation method thereof.
Background
The folium Nelumbinis is leaf of Nelumbo nucifera Gaetn (Nelumbo nucifera Gaetn) belonging to Nymphaeaceae. As a traditional Chinese medicine, the traditional Chinese medicine is originally from food therapy materia medica, and the traditional Chinese medicine records that lotus leaves: bitter, astringent and mild, entering heart, liver and spleen channels, relieving summer-heat and clearing heat, ascending the hair and clearing yang, dissipating blood stasis and stopping bleeding. Modern researches show that the lotus leaves contain various alkaloids such as liensinine, nuciferine, N-methyl linderane and the like, and bioactive components such as nelumboside, isoquercitrin, vitamin C, beta-sitosterol and the like. The lotus leaf has the pharmacological effects of resisting oxidation, reducing fat and losing weight, resisting cancer, inhibiting bacteria, tranquilizing, hypnotizing and the like. Xuezhining pill and Lotus leaf pill recorded in Chinese pharmacopoeia have the functions of reducing weight and fat, etc. With the improvement of living conditions, obesity is becoming a health problem facing people, and the need for weight loss is increasing. Exercise is the most effective weight-reducing means, but during exercise, along with fat metabolism, substances such as electrolytes and vitamins in the human body are also metabolized, so that physical fatigue and endurance decline are caused. the lotus leaf extracting solution is prepared by mixing lotus leaf powder and water in a mass ratio of 1: extracting at 60 deg.C and 80 deg.C under reflux with hot water for 30min, and filtering to obtain filtrate.
Further, the acidity regulator comprises citric acid and taurine; wherein the mass ratio of citric acid to taurine is 3-10: 10 to 50.
Further, the electrolyte comprises sodium citrate and potassium chloride; the mass ratio of the sodium citrate to the potassium chloride is 1-7: 1 to 7.
Further, the preparation method of the lotus leaf sport beverage comprises the following steps: 1) and (3) preparing materials: weighing citric acid, white granulated sugar, maltodextrin, sodium citrate, potassium chloride, taurine, vitamin C and vitamin B6, and adding into a blending tank; 2) and constant volume: fixing the volume by using a lotus leaf extracting solution; 3) and filtering: filtering the liquid with constant volume, and taking the filtrate for later use; 4) and (3) sterilization: sterilizing the filtrate to obtain the finished product.
Further, the filtering conditions in step 3) are as follows: suction filtration was carried out using filter paper with a pore size of 80 μm.
Further, the sterilization conditions in the step 4) are as follows: sterilizing by pasteurization, heating the filtrate to 62-65 deg.C, and sterilizing by condensing and refluxing for 30 min.
The invention contains the nutrient components of electrolytes, vitamins and the like of common sports drinks, and the added nuciferine has the effects of reducing fat and losing weight and meets the requirement of people on losing weight.
Detailed Description
The following are specific examples of the present invention and further describe the technical solutions of the present invention, but the present invention is not limited to these examples.
The lotus leaf sports beverage is prepared by proportioning, blending, filtering and sterilizing the lotus leaf extract, the acidity regulator, the electrolyte, the vitamins, the white granulated sugar and the maltodextrin.
In the present invention, the amount of citric acid added is 0.1 to 2g/L, preferably 0.7 g/L. The citric acid in the beverage is added with preservative into food, and has the characteristics of chelating action and pH value regulation, so that the performance of an antioxidant can be increased, the enzyme activity can be inhibited, and the storage life of the food can be prolonged in the processing of quick-frozen food.
In the present invention, the amount of the electrolyte sodium citrate added is 1 to 10g/L, preferably 2.5 g/L. The electrolyte potassium chloride is added in an amount of 1-10 g/L, preferably 2.5 g/L. The sodium citrate in the beverage has the function of adjusting the acid-base balance, so that the human body can be maintained within a normal PH value, and the sodium citrate has good help effect on the human body. The sodium citrate in the beverage can react with calcium ions in the body to relieve the calcium ions and promote or play a good role in hypertension. Potassium chloride can be used as nutritional supplement; the content of Na is reduced.
In the present invention, taurine is added in an amount of 0.1 to 1g/L, preferably 0.8 g/L. Taurine appears to be a strong antioxidant and may also improve the body's own recovery response.
Therefore, it can prevent injury and stress caused by exercise, and also can accelerate muscle reconstruction, thus playing a dual role. Since taurine is a common ingredient in energy beverages, it is generally believed that the combination of taurine and caffeine is a necessary condition for action.
In the present invention, the vitamins include vitamin C and vitamin B6, wherein the vitamin C is added in an amount of 0.1 to 1g/L, preferably 0.2 g/L. The amount of vitamin B6 added is 0.001-0.01 g/L, preferably 0.002 g/L. Vitamin C is necessary for antibody and collagen formation, tissue repair (including certain redox actions), metabolism of phenylalanine, tyrosine and folic acid, utilization of iron and carbohydrate, synthesis of fat and protein, maintenance of immune function, hydroxylation of 5-hydroxytryptamine, blood vessel integrity maintenance, non-heme iron absorption promotion and the like, and simultaneously the vitamin C also has the effects of oxidation resistance, free radical resistance and tyrosinase inhibition, so that the effects of whitening and spot lightening are achieved. The recent foreign medical research on the prevention of cancer by vitamin B6 shows that vitamin B6 can become coenzyme after entering human body and plays an important role in protein metabolism. Such as vitamin B6 deficiency, which damages cells and affects the immune function of body fluid, thereby inducing cancer, it is considered that sufficient vitamin B6 supplementation can effectively prevent the occurrence or development of bladder cancer.
In the invention, the addition amount of the white granulated sugar is 40-120 g/L, preferably 80 g/L. Drinking during exercise can increase sugar oxidation during exercise, supply energy, increase blood sugar level, save muscle glycogen, reduce muscle glycogen loss to prolong exercise time: drinking after exercise can replenish and recover consumed muscle glycogen as soon as possible. In addition, sugar in the sports drink can stimulate the intake of the drink, improve the absorption rate of the drink and contribute to the complete recovery of body fluid after sports.
In the present invention, the amount of maltodextrin added is 1 to 10g/L, preferably 6 g/L. Maltodextrin is a component extracted from malt, contains abundant lactose, and can be used for increasing the viscosity of food. The maltodextrin has rich vitamin D and vitamin E contents, can increase the absorption of bones to calcium ions, reduce the probability of osteoporosis, whiten skin, remove facial pigmentation, promote the discharge of body wastes, and has the effects of relaxing bowel and losing weight.
In the invention, pasteurization is used for sterilization, and the sterilization is carried out after heating and refluxing for 30min at 62-65 ℃.
The technical solutions provided by the present invention are described in detail below with reference to examples, but they should not be construed as limiting the scope of the present invention
Example 1
1) Preparing a lotus leaf extracting solution: the mass ratio of the lotus leaf powder to the water is 1: 60 extracting folium Nelumbinis extract at 80 deg.C under reflux with hot water for 30min, and filtering.
2) Blending: weighing 80g of white granulated sugar, 0.6g of citric acid, 0.8g of taurine, 6g of maltodextrin, 2.5g of potassium chloride, 2.5g of sodium citrate, 0.2g of vitamin C and 0.002g of vitamin B6, adding into a blending tank, and adding lotus leaf extract to a constant volume of 1L.
3) And (3) filtering: suction filtration was carried out using filter paper with a pore size of 80 μm.
4) And (3) sterilization: heating the prepared crude product to 62-65 ℃, and carrying out condensation reflux for 30 min.

Example 2: formulation optimization experiment
Orthogonal experiment
In the experiment, the vitamins have little influence on the taste of the beverage, and an orthogonal experiment is carried out by taking electrolyte, citric acid, taurine and white granulated sugar as horizontal factors, and the data are as follows:

From the above examples, the invention provides a lotus leaf sport beverage and a preparation method thereof. The beverage prepared according to the formula can obtain a sports beverage product which can improve the excitability, increase the physical energy and mobilize, adjust the acid-base balance in the body, help eliminate fatigue, quickly recover physical strength and reduce fat.

1. The lotus leaf sport beverage is characterized by comprising, by mass, 0.02% -0.2% of acidity regulator, 0.02% -0.2% of electrolyte, 0.01% -0.1% of vitamin C, 0.0001% -0.001% of vitamin B6, 4% -10% of white granulated sugar, 0.1% -1% of maltodextrin and the balance of lotus leaf extract;
the lotus leaf extracting solution is prepared by mixing lotus leaf powder and water in a mass ratio of 1: extracting at 60 deg.C and 80 deg.C under reflux with hot water for 30min, and filtering to obtain filtrate.
2. The lotus leaf sport beverage as recited in claim 1, wherein said acidity regulator comprises citric acid and taurine; wherein the mass ratio of citric acid to taurine is 3-10: 10 to 50.
3. The lotus leaf sport beverage according to claim 1, 2 or 3, wherein said electrolyte comprises sodium citrate and potassium chloride; the mass ratio of the sodium citrate to the potassium chloride is 1-7: 1 to 7.
4. A method of preparing the lotus leaf sport beverage according to claim 1, wherein the preparation method of the lotus leaf sport beverage comprises the following steps: 1) and (3) preparing materials: weighing citric acid, white granulated sugar, maltodextrin, sodium citrate, potassium chloride, taurine, vitamin C and vitamin B6, and adding into a blending tank; 2) and constant volume: fixing the volume by using a lotus leaf extracting solution; 3) and filtering: filtering the liquid with constant volume, and taking the filtrate for later use; 4) and (3) sterilization: sterilizing the filtrate to obtain the finished product.
