Abstract
本发明公开了一种降脂粗粮粉,由以下重量份的原料组成:海带10-30份、荞麦15-25份、红薯15-20份、高粱15-30份。所述降脂粗粮粉通过日常饮食来平衡身体营养,并能达到缓解“三高”疾病的粗粮制品,长期食用本粗粮制品可以增强人体免疫力,降低血液粘稠度,缓解“三高”症状。

技术领域
本发明涉及食品保健技术领域,具体为一种降脂粗粮粉及其制备方法。
背景技术
随着社会的高速发展和进步,人们的饮食也在不断改善,各种高脂肪、高能量、高蛋白的食物早已不是稀缺之物,在现在的餐桌上可谓应有尽有,不知不觉中,从高热量的饮食中,派生出了一种“富贵病”-三高,即高血压,高血糖,高血脂。“三高”的病理原因是:由于长时间饮食习惯问题,饮食中脂类过多,醇类过多。同时又没有合理的运动促进脂类醇类的代谢,导致体内脂类醇类物质逐渐增多,掺杂在血液中,使毛细血管堵塞,随着时间的推移,脂类醇类物质容易和体内游离的矿物质离子结合,形成血栓。血栓容易在血管的拐角处,或者瓶颈处堆积,钙化。同时血栓越来越多,使血管直径缩小。心脏为了保持足够的供血量,就增加血压,造成高血压疾病。如果血压过高,可能导致血管崩裂,于是产生出血性心脑血管疾病。如果由于堵塞供血不足,即为缺血性心脑血管疾病。卫生部发布信息称我国有2.6亿慢性病“三高”患者,由此可见,由于日常饮食引起的“三高”在中国已经相当普遍,严重影响到了我们的身体健康。
而粗粮是指相对我们平时吃的精米白面等细粮而言的,主要包括谷类中的玉米、小米、紫米、高粱、燕麦、荞麦、麦麸以及各种干豆类,如黄豆、青豆、赤豆、绿豆等,在物质丰富的今天,人们的饮食过精,麦当劳、肯德基、必胜客以及各种快餐,让我们的身体在迅速补充热量的同时,埋下了潜在的隐患,“为了心脏健康,我们一直都在强调,要少吃垃圾食品。事实上,管住嘴并非很容易。相反,多吃健康食品更容易做到,大家更容易坚持。”胡大一教授给出建议,例如燕麦,它不仅可以抑制人体对胆固醇的吸收,而且,燕麦带来的饱腹感,还能让我们少吃很多不健康的食物,对保护心脏可能有事半功倍的效果。
荞麦,拉丁学名(Fagopyrum esculentum),是蓼科荞麦属植物,根据中国医学科学院卫生研究所对中国主要粮食的营养成分分析, 荞麦面粉的蛋白质含量明显高于大米、小米、小麦、高粱、玉米面粉及糌粑。荞麦面粉含18种氨基酸,氨基酸的组分与豆类作物蛋白质氨基酸的组分相似。脂肪含量也高于大米、小麦面粉和糌粑。荞麦的营养成分主要是丰富的蛋白质;B族维生素;芦丁类强化血管物质;矿物营养素;丰富的植物纤维素等。最近研究显示:经常食用荞麦不易引起肥胖症,因为荞麦含有营养价值高、平衡性良好的植物蛋白质,这种蛋白质在体内不易转化成脂肪,所以不易导致肥胖。另外荞麦中所含的食物纤维是人们常吃主食品面和米的八倍之多,具有良好的预防便秘作用,经常食用对预防大肠癌和肥胖症有益。荞麦有防治高血压、冠心病的作用,同时又防治糖尿病的作用,
红薯,拉丁学名(sweet potato),红薯含有丰富的淀粉、维生素、纤维素等人体必需的营养成分,还含有丰富的镁、磷、钙等矿物元素和亚油酸等。这些物质能保持血管弹性,对防治老年习惯性便秘十分有效。红薯的热量只有大米的1/3,而且因其富含纤维素和果胶而具有阻止糖分转化为脂肪的特殊功能。红薯不仅是健康食品,还是祛病的良药。《本草纲目》记载,红薯有补虚乏,益气力,健脾胃,强肾阴的功效。「红薯蒸、切、晒、收,充作粮食,称做薯粮,使人长寿少疾。《本草纲目拾遗》说,红薯能补中、和血、暖胃、肥五脏。《金薯传习录》说它有6种药用价值:治痢疾和泻泄;治酒积和热泻;治湿热和黄疸;治遗精和白浊;治血虚和月经失调;治小儿疳积。《陆川本草》说,红薯能生津止渴,治热病口渴。红薯含有大量不易被吸消化酵素破坏的纤维素和果胶,能刺激消化液分泌及肠胃蠕动,从而起到通便作用。另外,它含量丰富的β-胡萝卜素是一种有效的抗氧化剂,有助于清除体内的自由基,还是一种理想的减肥食品。
高粱,(Sorghum vulgare)禾本科,高粱属。《纲目》中记载:"高粱性味:甘涩,温,无毒。"高粱味甘性温,食疗价值相当高。中医认为,高粱性平味甘、涩、温、无毒,能和胃、健脾、止泻,有固涩肠胃、抑制呕吐、益脾温中、催治难产等功能,可以用来治疗食积、消化不良、高血压、高血脂等。
海带是一种营养价值很高的蔬菜,每百克干海带中含:粗蛋白8.2克,脂肪0.1克,糖57克,粗纤维9.8克,无机盐12.9克,钙2.25克,铁0.15克,以及胡萝卜素0.57毫克,硫胺素(维生素B1)0.69毫克,核黄素(维生素B2)0.36毫克,尼克酸16毫克,能发出 262千卡热量。与菠菜、油菜相比,除维生素C外,其粗蛋白、糖、钙、铁的含量均高出几倍、几十倍。海带是一种含碘量很高的海藻,一般含碘3~5‰,多可达7~10‰。【性味归经】性味:咸,寒。①《吴普本草》:“酸咸,寒,无毒。”②《本草再新》:“味苦,性寒,无毒。”归经:入肝、胃、肾三经①《要药分剂》:“入胃经。”②《本草再新》:“入脾经。”【功用主治】消痰软坚、泄热利水、止咳平喘、祛脂降压、散结抗癌。用于瘿瘤、瘰疬、疝气下堕、咳喘、水肿、高血压、冠心病、肥胖病。
在紧张的生活、工作之余,人们如果合理、定期的服用部分粗粮,对改善目前饮食习惯引起的疾病有着重要作用,以上粗粮及海带均对“三高”有着较好的缓解作用,而单独制作又工序复杂,而且食用过于单一,难以实现均衡。
发明内容
本发明的目的是针对上述现有技术不足而提出一种能通过日常饮食来平衡身体营养,并能达到缓解“三高”疾病的的粗粮制品,长期食用本粗粮制品可以增强人体免疫力,降低血液粘稠度,缓解“三高”症状。
本发明是采用以下技术方案实现的:
本发明的降脂粗粮粉是由以下重量份的原料组成:海带10-30份、荞麦15-25份、红薯15-20份、高粱15-30份,该四种原料组分特性分析已在背景技术中阐述,它是通过以下步骤加工而成的:
步骤一、按所述重量份称取原料,海带清洗后,在55℃下烘干,去除水分,荞麦,高粱挑选无病虫害的去皮,淘洗干净,烘干;红薯洗净后,去皮,备用;
步骤二、将烘干后的海带、荞麦和高粱用粗粉碎机粉碎至60-100目,备用;
步骤三、将红薯按长度2-5cm切块,加入2-5倍量100℃水,煮15-30min,冷却至50℃后打浆,得浆液,备用;
步骤四、将步骤二制得的粗粉和步骤三制得的浆液混合至充分润湿,添加适量水分至粗粉与浆液充分混合至有弹性但不粘手即可;加入重量百分比0.2-1.2%的琪酵母粉,先用30-35℃温水化开,然后与粗粮充分混合搅拌,发酵50-80分钟,待面粉明显膨胀后,备用;
步骤五、发酵完毕后,将粗粮混合物在45-55℃下干燥,去除水分,粉碎,在干燥铁锅内急火炒熟,控制水分在3%以下、灭菌、计量,包装至20、30、50、100克规格,即得;
多种包装规格,适用于不同人群的喜好特点来服用,20、30克包装适合儿童和老年人在三餐之间加餐服用,50、100克适用于三餐不定时,可当做正餐服用1-3包,开水冲开,稍凉后即可饮用,或者用于早餐放在锅中熬煮,粘稠后服用。
灭菌过程中采用液体氮技术在零下196℃超低温灭菌,时间为30-60min。
所述包装为内层镀铝的塑料袋包装。
本发明的有益效果为:
1、本发明降脂粗粮粉,能全面平衡人体营养,即时补充人体所需要的粗纤维,维生素、氨基酸等营养物质。
2、本发明降脂粗粮粉对由于肥胖、饮食结构不合理引起的“三高”的中老年人群尤其适合,长期服用可以有效缓解高血压、高血脂和高血糖,降低指标,减少药物服用剂量,对人体无任何副作用。
3、饮用方便。本发明降脂粗粮粉可以开水冲开后稍凉后服用,也可以在锅中蒸煮,不糊化,不粘锅,悬浮率高,容易被人体消化吸收。
4、本发明降脂粗粮粉口感柔和,不刺激,各年龄段人群均可以服用,无副作用。
5、加工工艺合理,容易被人体消化吸收。对粗粮进行发酵,使粗粮中高分子营养物质更容易被人体消化吸收,提高营养的利用率。加工方法简单,方便适合各种加工模式。
6、不添加任何食品添加剂,安全,绿色,环保。
具体实施方式
实施例1 降脂粗粮粉配方:
海带 10份
荞麦 15份
红薯 15份
高粱 15份
制备方法为:
步骤一、按所述重量份称取原料,海带清洗后,在55℃下烘干,去除水分,荞麦,高粱挑选无病虫害的去皮,淘洗干净,烘干;红薯洗净后,去皮,备用;
步骤二、将烘干后的海带、荞麦和高粱用粗粉碎机粉碎至80目,备用;
步骤三、将红薯按长度2-4cm切块,加入3倍量100℃水,煮20min,冷却至50℃后打浆,得浆液,备用;
步骤四、将步骤二制得的粗粉和步骤三制得的浆液混合至充分润湿,添加适量水分至粗粉与浆液充分混合至有弹性但不粘手即可;选用安琪酵母粉,先用30-35℃温水化开,然后与粗粮充分混合搅拌,发酵70分钟,待面粉明显膨胀后,备用;
步骤五、发酵完毕后,将粗粮混合物在45-55℃下干燥,去除水分,粉碎,在干燥铁锅内急火炒熟,控制水分在3%以下、零下196℃超低温灭菌,时间为45min、计量,包装至100克规格,按照设计包装制作,封装。
实施例2 降脂粗粮粉配方:
海带 30份
荞麦 25份
红薯 20份
高粱 30份
制备方法为:
按照实施例1制作步骤进行降脂粗粮粉配方2的制作,设计为20、30克规格,按照设计包装制作,封装。
实施例3 降脂粗粮粉配方:
海带 20份
荞麦 20份
红薯 17份
高粱 20份
制备方法为:
按照实施例1制作步骤进行降脂粗粮粉配方2的制作,设计为20、30、50克3种规格,按照设计包装制作,封装。
对制得的降脂粗粮粉进行内控指标检测,见下表:
效果实施例:本降脂粗粮粉的降血糖功能人体实验结果:
经发明人两年多的研究验证,对本发明降脂粗粮粉进行降血糖功能人体实验,经56 例系统临床观察,并选择病史、病情、年龄、性别及原治疗方法相当的糖尿病患者10 例为对照组。从住院及内分泌专科门诊选择病例,按卫生部1980 年制定的糖尿病诊断标准,确认为成年糖尿病患者的,在口服降糖药及胰岛素治疗的基础上,空腹血糖≥7.2mmol/L 者为观察对象,其中男37 例,女19 例,年龄43- 66 岁。对以上糖尿病患者进行本发明的验证试验,试验期间,服用本降脂粉100克/天,30天为一个疗程;对照组按常规降糖治疗,其中降糖药物、品种用法用量与试验相匹配。经过3个疗程后,总有效率达98%,对照组服用胰岛素进行治疗,血糖指标从11.23±3.22降到了10.12±2.96(mmd/L);而使用本降脂粗粮粉的患者三个疗程后血糖指标平均从11.56±3.65降到了7.55±2.32。
效果实施例:本降脂粗粮粉的降血压功能人体实验结果:
发明人还对本降脂粗粮粉对人体的降血压功能进行了试验,本次共针对115例患者进行了临床治疗,其中男性患者65例,女性患者50例,年龄从42岁-65岁,115名患者均为长年高血压患者,服用降压药剂有硝苯地平片、可乐定、胍乙定、哌唑嗪、普萘洛尔等,大多数高血压患者为饮食不合理导致的肥胖所引起,还有肾病高血压等患者。对高血压患者采用平常服用粗粮降脂粉进行治疗,计量100克/天,15天为一个疗程,5个疗程后观察。对照组高血压患者按照平常用药进行治疗,结果表明,共有100名患者的血压,95-102/156-165降低到了85-91/117-124,起到了显著的治疗效果,还有5名患者的高压也降低到了140以下的正常范围,总有效率达91.3%,另有10名患者无效,原因为这10名患者为肾病引起的高血压,难以通过提倡饮食进行治疗。
另外,本发明降脂粗粮粉对高血脂患者也有明显的缓解和治疗作用,经过发明人临床试验,发现该降脂粗粮粉在患者服用5-8个疗程后,均会得到不同程度的治疗作用,总效率达95%以上。由此可见,本发明所研制的粗粮粉不仅可以均衡人体营养,对患有“三高”的人群有着重要的疗效。
Claims (6)
1.一种降脂粗粮粉,其特征在于:由以下重量份的原料组成:海带10-30份、荞麦15-25份、红薯15-20份、高粱15-30份。
2.权利要求1所述的降脂粗粮粉的制备方法,其特征在于:通过以下步骤制备:
步骤一、按所述重量份称取原料,进行清洗、烘干;
步骤二、将烘干后的海带、荞麦和高粱用粗粉碎机粉碎至60-100目,得粗粉,备用;
步骤三、将红薯按长度2-5cm切块,加入2-5倍量100℃水,煮15-30min,冷却至50℃后打浆,得浆液,备用;
步骤四、将步骤二制得的粗粉和步骤三制得的浆液混合至充分润湿,添加适量水分使粗粉与浆液充分混合,至有弹性但不粘手即可,加入重量百分比0.2-1.2%安琪酵母,在32-35℃,发酵50-80分钟;
步骤五、发酵完毕后,将粗粮混合物在45-55℃下干燥,去除水分,粉碎,炒熟,控制水分、灭菌、计量,包装至20、30、50、100克规格,即得。
3.根据权利要求1所述的降脂粗粮粉,其特征在于:所述安琪酵母的用法为:将安琪酵母用温度为30-35℃温水化开,然后与粗粮充分混合搅拌。
4.根据权利要求1所述的降脂粗粮粉,其特征在于:所述控制水分为:含水量低于3%。
5.根据权利要求1所述的降脂粗粮粉,其特征在于:所述灭菌为:采用液体氮技术在零下196℃超低温灭菌,时间为30-60min。
6.根据权利要求1所述的降脂粗粮粉,其特征在于:所述包装为塑料袋或内层镀铝的塑料袋包装。
