Abstract

Un metodo para la produccion in situ de un emulsionante en un producto alimenticio, en donde se agrega una aciltransferasa de lipido al producto alimenticio; preferiblemente, el emulsionante es producido sin aumentar, o sin aumentar significativamente el contenido de acido graso libre del producto alimenticio; preferiblemente, la aciltransferasa de lipido es capaz de transferir un grupo acilo de un lipido a uno o mas de los siguientes receptores de acilo: un esterol, un estanol, un carbohidrato, una proteina o una subunidad de la misma, glicerol; preferiblemente, ademas de un emulsionante, se puede producir uno o mas de los siguientes: un ester de estanol, o un ester de esterol, o un ester de proteina, o un ester de carbohidrato, o un diglicerido, o un monoglicerido; o uno o mas de estos pueden funcionar como un emulsionante adicional.
