Abstract

La metodologia mostrada en esta invencion es adecuada para la preparacion de productos alimenticios sustitutos de carne de origen animal (ejemplos res, puerco, ave, venado, o pescado), que tengan caracteristicas nutricionales, textura, sabor y olor muy semejante a la carne objeto de la sustitucion, conteniendo al menos unos de los siguientes carnicos: res, puerco, ave o pescado o una combinacion de los anteriores y adicionada con proteina vegetal.
