Abstract

La invencion tiene por objeto un procedimiento de fabricacion de composiciones a base de frutas ricas en fibra, caracterizado porque comprende la etapa que consiste en incorporar 1 a 30%, de preferencia 2 a 20% y mas preferentemente aun 2.5 a 15% en peso con respecto al producto final de maltodextrinas ramificadas que presentan entre 15 y 35% de 1?6 enlaces glucosidicos, un contenido de azucares reductoras inferior a 20%, un indice de polimolecuiaridad inferior a 5 y una masa molecular promedio numerica Mn a lo mas igual a 4500 g/mol. La invencion tiene igualmente por objeto una composicion a base de frutas rica en fibra, caracterizada porque comprende 1 a 30%, de preferencia 2 a 20% y mas preferentemente aun 2.5 a 15% en peso con respecto al producto final de maltodextrinas ramificadas.
