Mimosinaza (EC 3.5.1.61) je enzim sa sistematskim imenom mimozin amidohidrolaza.[1] Ovaj enzim katalizuje sledeću hemijsku reakciju
- (S)-2-amino-3-(3-hidroksi-4-okso-4H-piridin-1-il)propanoat + H2O 3-hidroksi-4H-pirid-4-on + L-serin
Ovaj enzim je prisutan u lišću biljke Leucaena leuocephala.
