Abstract

The present invention relates to a breakfast cereal product base comprising further fermentation of the cereal slurry after inclusion of fermented dairy or plant protein isolates and its preparation method. The fermented dairy provides rich protein value, valuable micronutrient content. The plant meals and flours support macro nutrient increase especially proteins. Fermentation helps in improving the taste and flavor, also increase the organic acids, secondary metabolites, natural vitamins and minerals. Addition to the nutrition improvement, the use of fermented dairy and legume flours allows reduction/removal of added (refined) sugar and artificial sweeteners and vitamins. The use of both fermented groups allows for a reduction in glycemic index of the product. Fermentation of cereals also allows removal of the antinutrients naturally found in cereals.
