Description
Popping Candy Production Device
The Related Art
The invention relates to a device used in production of popping candies in the food sector.
The invention particularly relates to a device, comprising a stirring and gas feed vane which ensures obtaining a homogeneous sugar-gas mixture by feeding gas into the reactor through the holes found thereon during the stirring operation, and which reduces the operation time and costs of popping candy production operation by means of dipping the reactor, which can both move up and down with the motion formed by the piston and rotate 180 degrees by means of the connected reducer, into the cooling pond found in its structure.
The Prior Art
Popping candy is a type of candy in which pressurized gas is entrapped in the form of small particles. When the candy starts to melt in mouth, the gas entrapped in the candy comes out of the candy and causes tiny popping actions. Popping candy is made of a warm mixture consisting of glucose and water, and it is produced by mixing carbondioxide gas into this warm mixture in a reactor vessel at a certain level of pressure and then cooling. This production is made with different methods and mechanisms. Popping candy production is generally performed in a closed system. Gas is admixed into the liquid-form hot sugar syrup under a pressurized medium, cooled under a pressurized medium, and broken into pieces by mixing. In this way, sugar granules are obtained with gas compressed therein. In production performed in a closed system, appropriate amount of sugar syrup is added into the pressurized reactor according to the size of the container and mixed with gas and left to cooling. After the reactor pressure is reduced to medium pressure, it is opened to take out the cooled sugar.
One of the commonly encountered problems in popping candy production is the time lost during cooling of the warm sugar mass. Slower cooling operation negatively affects sugar quality, the colour of the sugar gets darker, and its taste deteriorates. Longer cooling period causes operation with lower capacity and therefore significantly increases labour costs. In the known status of the art, during production of popping candies, following mixing of materials at a certain temperature, the mixing is stopped and cooling operation is started.
In a patent research made about the subject, some applications are encountered in the prior art. One of these applications is the American patent application No. US6364521. In the application, it is disclosed that the warm mass of sugar mixed with gas formed after the popping candy materials are mixed is left for cooling in a water cooled reactor. In this kind of cooling operations, a thick layer of sugar mixture is accumulated at the lower part of the reactor due to gravity. Moreover, since sugar is in the form of a spongy structure containing gas bubbles, heat transfer gets slower and the cooling and crystallization period of sugar gets longer.
Another study is disclosed in the patent application No. TR 2009 01242. This invention relates to production of popping candy, which is produced by compressing high pressure gas bubbles into the hard candy, and which makes crunching sounds when melted in mouth. In the method formed with this invention, hard sugar melt is baked and then filled into cooling tanks. A mixer unit and a gas feed unit are positioned on the pipeline between the pump and the cooling tanks. In this way, the gas is mixed during the flow of the hard sugar melt, and the mixed product is filled into the cooling tanks.
In said application, two separate tanks are used for mixing and cooling. While the warm sugar syrup is being mixed with gas in the first tank, cooling is made in the second tank and a transfer pipeline is found between these two tanks. Costs and production time are increased with this system.
As a result, need has occurred for improvement in the relevant technical field due to the above said drawbacks and shortcomings.

Detailed Description of the Invention
In this detailed description, the preferred embodiments of the popping candy production device (100), which reduces the cooling time significantly reducing the production capacity, and thus provides improvement in production capacity and product quality are only disclosed for better understanding of the subject.
Figure 1 gives a general view and Figure 2 gives a detailed view of the popping candy production device (100) according to the invention. Accordingly, the popping candy production device (100), in its main structure, consists of a main chassis (1 ) containing all of the relevant components of the machine, a reactor (40) in which the popping candy is produced, and a cooling pond (50) in which cooling operation is performed.
Figure 3 provides a detailed view of the reactor found in the popping candy production device according to the invention. The reactor (40) comprises a material inlet cover (41 ) from where sugar in liquid form is added, and a sugar outlet cover (42) from where the final product obtained as a result of the production is gathered are found. At the same time, a stirring and gas feed vane (45) which rotates throughout the production and ensures providing gas into the medium is found in order to obtain a homogeneous sugar-gas mixture within the reactor (40). The energy needed for the stirring operation is obtained from the stirrer engine (35) that is connected to the reactor (40) by means of a connection component (10). The drive obtained from the stirrer engine (35) is transmitted to the gas feed vane (45) by means of a stirrer shaft (44). Gas inlet into the reactor (40) is ensured by means of a gas valve (46).
The cooling step, which comes after the stirring operation, is performed by rotation of the reactor (40) 180 degrees by means of the rotating reducer (30) and then dipping into the cooling pond (50) positioned on the main chassis (1 ).
The motion transfer component (5) which is an intermediate component for connection of the reducer (40) with the main chassis (1) and the rotating reducer (30) and at the same time provides up-and-down movement of the reactor (40) by means of the connected piston (15). Figure 4 shows a top and 180-degree rotated view of the reactor (40) found in the popping candy production device (100) according to the invention. With the operation of the hydraulic engine (25), the hydraulic oil found in the hydraulic tank (20) applies pressure onto the piston (15), and thus the motion transfer component (5) and therefore the reactor (40) moves upward (in direction A). When the hydraulic engine (25) is stopped, the reactor (40) that is rotated 180 degrees by means of the reducer (30), is moved downward (in direction B) by means of the piston (15), and thus dipped into the cooling pond (50).
The operating principle of the popping candy production device (100) is as follows: In the first stage, liquid sugar is placed into the reactor (40) through the material inlet cover (41 ), and then gas is fed into the reactor (40) slowly through the gas valve (46). With the operation of the stirrer engine (35), the stirrer shaft (44) transfers the drive it receives to the stirring and gas feed vane (45), and thus stirring operation is initiated. By means of feeding gas into the reactor through the holes found on the stirring and gas feed vane (45), a homogeneous gas - sugar mixture is obtained at the end of the stirring operation. At this stage, hydraulic engine (25) is operated, and the piston (15) and therefore the reactor (40) containing the homogeneous sugar-gas mixture is moved upward, in direction A, by means of the hydraulic oil found within the hydraulic tank (20). The reactor (40) is rotated 180 degrees by means of the rotating reducer. In the second stage, the rotated reactor (40) is dipped into the cooling pond (50) by being moved downward, in direction B, by means of the motion transfer component (5) and the piston (15). The homogeneous mixture is allowed to cool for a while and then taken out of the cooling pond (50) by means of the motion transfer component (5) and the piston (15).
The popping candy as the resultant final product, is discharged from the reactor (40) by opening the sugar outlet cover (42) found on the reactor (40). After the product is discharged, the reactor (40) is rotated again 180 degrees by means of the rotating reducer (30) and then made ready for producing popping candy again.
With the popping candy production device (100) developed, the operations of homogeneous stirring of materials and cooling of the obtained mixture are performed in the same reactor (40). In this way, the cooling time which significantly reduces the production capacity is reduced and thus improvement is provided in production capacity and product quality.
