Abstract
The proposed invention relates to food industry, namely to baking and can be used for making bread from the mixture of wheat and rye flours. A method of making mixed wheat-rye bread "Zhyto" (Rye) provides use of malt and rye flour and includes preparation of a scalded flour, holding thereof, kneading dough from the scalded flour, yeast and water with introduction of sugar, salt, fat component, for example caraway, forming, proofing and baking. Yeast into dough are introduced directly at kneading, i. e. the dough is prepared by straight dough method; additionally a breadbaking improver, for example Don-1 or Don-2, is introduced in the dough.
