Abstract
1. Способ производства изделий из теста с плодовой начинкой, включающий приготовление теста из муки и других исходных ингредиентов, а плодовой начинки - из свежих плодов с введением загустителя, отличающийся тем, что в качестве плодовой начинки используют пригодные для этого сорта ягодных культур, подготавливая каждую порцию начинки из одной или нескольких ягод, либо сорта фруктовых культур, подготавливая каждую порцию начинки из цельных или разделенных на дольки фруктов, причем процесс подготовки плодовой начинки ведут с предварительным разделением последней на отдельные порции по одному или нескольким плодам либо их долькам с применением инжектирования на каждую порцию загустителя, состоящего из густого сладкого сиропа, приготовляемого из водного раствора сахарной пудры с концентрацией сахара от 15 до 55% и выдерживании температуры глазуируемой начинки в интервале 0…15°С в течение 6…17 мин.2. Способ производства изделий из теста с плодовой начинкой по п.1, отличающийся тем, что форму приготовляемых изделий принимают сферической, эллипсоидной, коноидальной, либо геометрически подобной форме плода(ов) отдельной порции глазуируемой начинки, то есть форме одной или нескольких ягод, одного(ой) или нескольких фруктов или долек.1.
