Abstract
본 발명에 따른 과일주스의 제조방법은, 과일주스의 제조방법에 있어서, 과일 원물을 소분한 다음 급속 냉동하여 냉동 과일을 제조하고, 상기 냉동 과일을 저온 냉동 보관하는 단계(S1); 비정제 원당을 물에 혼합하고 끓여 시럽을 제조하는 단계(S2); 상기 냉동 과일을 해동한 다음 상기 시럽을 넣고 분쇄하고 착즙하여 과일즙을 제조하는 단계(S3); 상기 과일즙을 여과하는 단계(S4); 및 상기 여과한 과일즙을 살균하는 단계(S5);를 포함하는 것을 특징으로 한다.

Claims (6)
- 과일주스의 제조방법에 있어서,
과일 원물을 -30~-40℃ 이하의 온도에서 냉동하여 동결하고, 상기 동결에 따른 냉동 과일을 -50℃ 이하에서 냉동 보관하는 단계(S1);
비정제 원당을 물에 혼합하고 끓여 시럽을 제조하는 단계(S2); 및
상기 냉동 과일을 해동한 다음 상기 시럽을 넣고 갈아서 과일주스 원액을 제조하는 단계(S3);를 포함하되,
상기 S2 단계에서, 상기 비정제 원당은, 머스코바도, 터비나도, 케인슈거 및 카소나드로 이루어진 군으로부터 선택되는 적어도 둘 이상이며, 상기 비정제 원당과 물은 1.5~3.5:1의 중량비로 혼합하고,
상기 S3 단계에서, 상기 냉동 과일 100 중량부에 대하여, 상기 시럽 5~20 중량부를 넣고, 나한과 열매 분말 및 수국차잎 분말의 1~3 중량부를 더 첨가하는 것을 특징으로 하는 과일주스의 제조방법.
