Description
Claims (15)
- 지방 조성물로서,
당해 지방 조성물에 존재하는 총 트리글리세라이드를 기준으로,
55 내지 75 중량%의 StOSt;
10 내지 25 중량%의 POSt; 및
10 중량% 미만의 POP를 포함하며, 그리고
하기 N-값:
45 미만의 N35; 및
80 초과의 N10을 갖는, 지방 조성물. - 제1항에 있어서, 당해 지방 조성물에 존재하는 총 트리글리세라이드를 기준으로 8 중량% 미만의 POP를 포함하는, 지방 조성물.
- 제1항 또는 제2항에 있어서, 60 내지 80 중량%의 시어 스테아린(shea stearin) 및 20 내지 40 중량%의 일립 버터(illipe butter)를 포함하는, 지방 조성물.
- 제1항 또는 제2항에 있어서, 50 초과의 N25를 갖는, 지방 조성물.
- 제1항 또는 제2항에 있어서, 당해 지방 조성물에 존재하는 C12 내지 C24 지방산을 기준으로 1 내지 10 중량%의 팔미트산 함량을 갖는, 지방 조성물.
- 제1항 또는 제2항에 있어서, 당해 지방 조성물에 존재하는 C12 내지 C24 지방산을 기준으로 45 내지 75 중량%의 스테아르산 함량을 갖는, 지방 조성물.
- 제1항 또는 제2항에 있어서, StOSt 함량이 60 내지 70 중량%인, 지방 조성물.
- 제1항 또는 제2항에 있어서, POSt 함량이 11 내지 16 중량%인, 지방 조성물.
- 제1항 또는 제2항에 따른 지방 조성물을 제조하는 방법으로서, 60 내지 80 중량%의 시어 스테아린을 20 내지 40 중량%의 일립 버터와 혼합하는 단계를 포함하는 지방 조성물 제조 방법.
- 제1항 또는 제2항에 따른 지방 조성물을 포함하는 코코아 버터 향상제(cocoa butter improver).
- 제1항 또는 제2항에 따른 지방 조성물을 사용하여 지방-함유 과자류 제품의 내열성을 향상시키는 방법.
- 10 내지 90 중량%의 지방을 포함하는 과자류 제품으로서,
상기 지방은, 당해 지방의 중량을 기준으로,
30 내지 55 중량%의 StOSt;
20 내지 40 중량%의 POSt; 및
5 내지 30 중량%의 POP를 포함하는, 과자류 제품. - 제12항에 있어서,
당해 지방 조성물에 존재하는 총 트리글리세라이드를 기준으로,
55 내지 75 중량%의 StOSt;
10 내지 25 중량%의 POSt; 및
10 중량% 미만의 POP를 포함하며, 그리고
하기 N-값:
45 미만의 N35; 및
80 초과의 N10을 갖는, 지방 조성물을 포함하는, 과자류 제품. - 제12항 또는 제13항에 있어서, 코코아 버터를 포함하는, 과자류 제품.
- 제12항 또는 제13항에 있어서, 코코아 분말, 당 및 레시틴으로부터 선택되는 하나 이상의 성분을 포함하는, 과자류 제품.
