Abstract
본 발명은 생약재 미네랄 효모 발효액을 이용하여 제조되는 발효 홍삼 조성물 및 그 제조방법에 관한 것이다. 본 발명의 제조방법에 의하면 다양한 생약재의 혼합물에 미네랄을 첨가하고 효모를 이용하여 발효함으로써, 효모를 단독 접종하여 발효한 경우에 비해 생약재 혼합물을 효과적으로 발효시킬 수 있으며 이런 발효로 인해 생약재에 함유되어 있던 생리활성물질의 유효성분을 식품으로 효과적으로 이용할 수 있다. 또한 상기 생약재 미네랄 효모 발효액에 홍삼을 침지해 발효 및 증숙시킴으로써 각종 미네랄 성분이 다량 함유될 수 있고 상기 생약의 유효성분들이 홍삼 내에 함유될 뿐만 아니라, 홍삼 내의 특정 유용한 진세노사이드 성분 함량이 증가하는 효과를 얻을 수 있어 이를 다양한 건강기능식품에도 이용할 수 있다.The present invention relates to a fermented red ginseng composition prepared by using a herbal mineral yeast fermentation broth and a method for producing the same. 상기 생약재 혼합물의 전체중량에 대해 0.01~2중량%의 미네랄과 0.01~10중량% 효모균을 가하고 발효시켜 생약재 미네랄 효모 발효액을 제조하는 단계(2단계);
상기 2단계의 생약재 미네랄 효모 발효액 100중량부 기준으로 5~100중량부의 홍삼을 침지하고 발효시키는 단계(3단계);
제3단계의 발효 혼합물을 증숙하는 단계(4단계);
제4단계의 발효 혼합물을 건조실에 넣고 열풍을 부여하여 건조시키는 단계(5단계);
제5단계의 건조된 생약재와 홍삼의 혼합물을 탱크에 투입하고, 주정 수용액을 투입하는 단계(6단계); 및
제6단계의 혼합액을 가열하면서 추출한 다음 추출액을 분리 및 농축하여 발효 홍삼 조성물을 제조하는 단계(7단계);
