Claims (3)
- 잎과 씨방을 포함하는 더덕 줄기 100 중량부와 설탕 47.5∼52.5 중량부를 혼합 및 발효하여 만든 더덕 효소 147.5∼152.5 중량부에 대해서, 현미찹쌀 16 중량부로 지은 고두밥, 더덕 뿌리 100 중량부, 누룩가루 10 중량부, 이스트 0.1 중량부, 물 95∼105 중량부를 준비하는 재료 준비 단계(S1);
준비한 더덕 효소, 고두밥, 더덕 뿌리, 누룩가루, 이스트, 물을 혼합하고, 그 혼합물을 항아리에 넣어서 4∼6개월을 발효하여 혼합물을 식초화하는 혼합 및 발효 단계(S2);
식초화된 혼합물을 여과재로 거르고 항아리에 담아서 6∼8개월간 숙성하여 더덕 식초를 완성하는 여과 및 숙성 단계(S3)로 더덕 식초를 제조함을 특징으로 하는 더덕 식초의 제조 방법.
- 제 1항에 있어서,
재료 준비 단계(S1)에서는,
더덕 효소는 더덕 줄기와 더덕 씨방과 설탕을 항아리에 담아서 4∼6개월을 발효하여 만들고,
혼합 및 발효 단계(S2)에서, 항아리에서 발효되는 더덕 효소, 고두밥, 더덕 뿌리 누룩가루, 이스트, 물의 혼합물은,
발효하는 처음에는 항아리 입구를 개방한 상태에서 10일을 발효한 다음, 항아리 입구를 광목천으로 덮어 고정한 상태에서 2개월을 더 발효하고, 그 이후는 항아리 입구를 밀봉하고 에어락이 설치된 상태로 발효하며,
여과 및 숙성 단계(S3)에서는,
식초화된 혼합물을 여과재에 걸러서 항아리에 담은 다음, 7일 후에 여과재로 걸러주는 여과 과정을 7일 간격으로 2∼3회 반복함을 특징으로 하는 더덕 식초의 제조 방법.
- 제 1항 또는 제 2항에 있어서,
여과 및 숙성 단계(S3) 다음에는,
제조된 더덕 식초는 항아리에서 적어도 12개월을 더 숙성하는 추가 숙성 단계(S4)가 추가됨을 특징으로 하는 더덕 식초의 제조 방법.
