상기 표 2의 결과를 살펴보면, 비교예의 소금과 비교해 볼 때 실시예 1 및 4의 소금은 피부의 가려움증 완화, 숙면정도, 회복속도에 상당히 효과적임을 알 수 있다. 제 1 및 제 2그룹의 피검자들은 소양감과 수면장애가 크게 줄어 숙면을 취한 것으로 나타났다. 상기 실시예들과 비교 예의 소금을 대상으로 관능검사를 실시하였다. 15명의 훈련된 패널을 선정하여 소금의 외관, 향, 맛, 종합적 기호도를 다음과 같은 9점 척도법에 의해 평가하도록 하였다. 결과는 SAS(Statistical Analysis System)를 이용하여 ANOVA test후 Duncan's multiple range test로 시료 간의 유의성은 5% 수준에서 최소 유의 차 검정(least significant difference test)으로 조사하였다. 이상의 관능 검사 결과는 하기 표 3에 나타내었다.Sensory tests were conducted on the salts of the above Examples and Comparative Examples. 상기 표 3의 결과를 살펴볼 때, 외관, 향, 맛에서 실시예들이 비교예보다 점수가 훨씬 더 높음을 알 수 있다. 특히, 향이 훨씬 더 우수한 것으로 나타났는데 이는 편백에서 발생되는 테르펜류의 방향물질에 의한 것으로 보인다. 또한, 실시예들의 경우 비교예에 비해 짠맛이 덜한 것으로 확인되었다. 상기 전처리단계 후 상기 천일염에 편백 분말 또는 편백 추출액을 혼합하는 혼합단계와;
상기 혼합단계 후 상기 천일염을 건조시키는 건조단계;를 포함하며,
상기 혼합단계의 상기 편백 분말은 편백에 열을 가해 숙성시키는 열처리공정을 2 내지 3회 반복하여 수행하는 가공단계와, 상기 가공단계에서 열처리된 상기 편백을 분쇄하는 분쇄단계를 포함하고,
상기 가공단계의 열처리공정은 a)상기 편백에 수증기를 가해 5 내지 15분 동안 찌는 단계와, b)찐 편백을 건조시키는 단계와, c)건조된 편백을 20 내지 30℃에서 4 내지 10일 동안 보관하여 숙성시키는 단계를 포함하는 것을 특징으로 하는 편백을 이용한 기능성 소금의 제조방법. A pretreatment step of roasting the sun salt;
