Description
Claims (10)
- (a) 전분액을 액화시키는 단계;(b) 말토제닉 α-아밀라아제의 존재 하에서 상기 액화된 전분액을 당화시키는 단계;(c) 말토우즈가 풍부한 시럽을 얻기 위해 풀루라나아제 및 이소아밀라아제로 이루어진 군으로부터 선택된 적어도 하나의 탈측쇄화 효소 및 β-아밀라아제의 존재 하에서 상기 액화된 전분액을 연속적으로 당화시키는 단계로 이루어진 연속적 단계를 포함하는 말토우즈가 풍부한 시럽의 제조방법.
- (a) 전분액을 액화시키는 단계;(b) 말토우즈가 풍부한 시럽을 얻기 위해, 풀루라나아제 및 이소아밀라아제로 이루어진 군으로부터 선택된 적어도 하나의 탈측쇄화 효소 및 말토제닉 α-아밀라아제의 존재 하에서 상기 액화된 전분액을 당화시키는 단계로 이루어진 연속적 단계를 포함하는 말토우즈가 풍부한 시럽의 제조방법.
- 제 2 항에 있어서, 상기 액화된 전분액의 당화 단계 (b)는 β-아밀라아제의 존재 하에 계속됨을 특징으로 하는 말토우즈가 풍부한 시럽의 제조방법.
- 제 2항에 있어서, 상기 당화는 말토제닉 α-아밀라아제 및 이소아밀라아제의 존재 하에서 수행됨을 특징으로 하는 말토우즈가 풍부한 시럽의 제조방법.
- 제 1항 및 제 2항 중 어느 한 항에 있어서, 상기 당화는 상기 말토우즈 시럽이 적어도 87중량%의 말토우즈를 포함할 때까지 수행됨을 특징으로 하는 말토우즈가 풍부한 시럽의 제조방법.
- 제 1항 및 제 2항 중 어느 한 항에 있어서, 상기 말토우즈 시럽은 글루코우즈를 변형시키는 부가적인 단계로 수행됨을 특징으로 하는 말토우즈가 풍부한 시럽의 제조방법.
- 제 6항에 있어서, 상기 변형 단계는 글루코우즈 옥시다아제, 라이징 에이전트 및 산화 박테리아를 포함하는 군으로부터 선택된 시약의 도움으로 수행됨을 특징으로 하는 말토우즈가 풍부한 시럽의 제조방법.
- 제 1항 및 제 2항 중 어느 한 항에 있어서, 상기 글루코우즈 옥시다아제는 정제된 것임을 특징으로 하는 말토우즈가 풍부한 시럽의 제조방법.
- 제 1항 및 제 2항 중 어느 한 항에 따른 방법에 의해 얻어진 말토우즈가 풍부한 시럽의 수소화에 의해, 말티톨이 풍부한 시럽을 제조하는 방법.
- 제 5항에 있어서, 상기 당화는 상기 말토우즈 시럽이 적어도 90중량%의 말토우즈를 포함할 때까지 수행됨을 특징으로 하는 말토우즈가 풍부한 시럽의 제조방법.
