Claims (7)
- 가열수단을 이용하여 난각이 있는 상태의 계란을 살균 처리하는 방법에 있어서,난각과 노른자를 외접하는 구(球)들 중 가장 큰 구와 가장 작은 구의 중심점과 노른자의 중심점을 직선으로 연결하여 가상의 연장선을 만들고,상기 연장선상에서 노른자에 가장 근접한 흰자의 두 지점, 상기 난각에 가장 근접한 흰자의 두 지점 및 상기 두 구의 중심점을 설정하여 흰자의 온도 측정지점을 설정하고 이 흰자의 온도 측정지점에서 측정한 온도 중 가장 낮은 온도를 갖는 지점을 흰자의 최저 온도 지점으로 선정하고,상기 연장선상에서 노른자에 가장 근접한 흰자의 두 지점에 대해 가장 근접한 노른자의 두 지점, 이들 노른자의 두 지점 과 노른자의 중심점사이에 두 개의 중간지점, 및 노른자의 중심점을 노른자의 온도 측정지점을 설정하고, 이 노른자의 온도 측정지점에서 측정한 온도 중 가장 낮은 온도를 갖는 지점을 노른자의 최저 온도 지점으로 선정하고,상기 최저 온도 지점의 온도를 살균 처리 온도로 유지하면서 살균 처리 온도 유지 시간동안 유지하여, 흰자와 노른자가 동시에 살균되도록 하는 난각이 있는 상태의 계란을 살균 처리하는 방법.
- 제1항에 있어서,상기 계란 내부의 최저 온도 지점의 온도가 54∼59.5℃ 범위인 방법.
- 제1항 또는 제2항에 있어서,상기 계란 내부의 최저 온도 지점의 온도는 냉각 과정의 온도도 포함되는 방법.
- 제1항 또는 제2항에 있어서,상기 계란 내부의 최저 온도 지점의 온도는 가열수단에 포함된 가열매체 내로의 계란의 탈퇴 및 진입과정, 또는 대기를 포함한 가열매체간 계란의 이동 과정의 온도도 포함되는 방법.
- 제1항 또는 제2항에 있어서,상기 가열수단은 동일 또는 상이한 적어도 하나 이상의 가열매체를 포함하는 적어도 하나 이상의 가열수단을 사용할 수 있는 방법.
- 제1항 또는 제2항에 있어서,상기 살균 처리 온도 유지 시간은 4.56∼194분인 방법.
- 제1항 또는 제2항에 있어서,상기 노른자와 흰자에 대한 살균수준은 계란 내부의 살모넬라균의 수준을 5LOG 내지 12LOG로 감소시키는 것인 방법.
