テナーゼ「アマノJA(大野製薬製)0.1gと雑菌発
育抑制のためリゾチーム70ppmを各々少量の水にと
かして添加し、混合物の品温50°Cとして30分間攪
拌を高速にして混練する。混練後、容器に充填し15℃
で120時間保持すると均質で、なめらかであり、苦味
もまったく有せず、又全蛋白質中の水溶性蛋白質の割合
が35%のペースト状の生成物(■)が得られた。

化組成物が生成された。
