Abstract

PURPOSE:To enable effective sterilization of bacteria existing in grain flour, by making sterilizing water having a dissolved radical of a water-soluble organic compound having resonance structure into a misty state, letting grain powder flying in air and bringing the mist into contact with the grain flour. CONSTITUTION:Sterilizing water having dissolved radical of a water-soluble organic compound (e.g. acetic acid) having resonance structure is made into a misty state, grain flour (e.g. buckwheat flour) is forced to scatter in air and both the materials are brought into contact with each other. The sterilizing water, for example, is obtained by adding the water-soluble organic compound (e.g. acetic acid) having resonance structure to water, introducing the solution to an electrolytic cell and impressing an electric voltage to the solution. Consequently, bacteria existing in the grain flour can be effectively sterilized. Since sporular cells existing in the grain flour germinate when a water content reaches >=17wt.%, the sterilizing water acts on the germinated sporular cells and the sporular cells can also be sterilized. Further the above-mentioned sterilizing water is quite safe to human body and usable without anxiety.
