Abstract

PURPOSE: To obtain D-mannose useful as a raw material for D-mannitol or a culture medium for microorganisms in high purity and yield, by decomposing an alkali metallic hydrogensulfite adduct of D-mannose with hydrogen peroxide.
CONSTITUTION: An aqueous solution of an alkali metallic hydrogensulfite adduct of D-mannose expressed by formula I (M is Na or K) is decomposed with H2O2 in the presence of an alkaline earth metallic hydroxide, e.g. Ca(OH)2, while keeping the pH at about neutral at 60°C or below, and the decomposed solution is purified by an ion exchange resin to give the aimed compound expressed by formula II. The addition and desalting of the alkaline earth metallic hydroxide may be carried out after the decomposing reaction or the purifying treatment with the ion exchange resin. The D-mannose can be completely decomposed without isomerization, polymerization or decomposition. The desalting and the purification with the ion exchange resin can be completely carried out due to no sulfite present in the decomposed solution.
