Abstract

PURPOSE: To prepare a protein material with less odor than milk casein, not damaging the properties of a food, by treating casein which is made soluble by an alkali with a protein hydrolyzing enzyme of endopeptidase.
CONSTITUTION: Sodium or potassium caseinate obtained by making acid casein soluble by an alkali is deocdorized in a state of solution by using active carbon, etc. The deodorized sodium cseinate is treated with a neutral or alkali protein hydrolyzing enzyme of endopeptidase and enzyme decomposition is carried out under conditions that there is no reduction in the solubility of casein, small decomposition odor and formation of a bitter taste, and stability to viscosity reduction and calcium ion is lowered. After the deactivation of the enzyme by heating, a calcium salt and a phosphate are added to give fine insolubilized casein hydrolyzate, which, if necessary, is subjected to spray drying.
