Abstract
PURPOSE: To prevent the occurrence of uneven dough and the phenomenon of pulverized flour of waste noodle rising to the surface, by mixing wheat flour with a pulverized flour of waste noodle separately humidified in a specific proportion to form a dough sheet.
CONSTITUTION: Wheat flour and pulverized flour of waste noodle are separately humidified in two turbulizers (turbulators) etc. Preferably, the wheat flour is hydrated in the hydration range of 28W35%, and the pulverized flour of waste noodle is hydrated in the hydration range of 36W55%. The two doughs thus obtained are mixed in an aftermixer at a weight ratio between the wheat flour and the pulverized flour of the waste noodle of 60:40W95:5 to give a dough sheet. Thus, the sheet obtained has no unevenness and the phenomenon of the pulverized flour of the waste noodle rising to the surface, and is smooth and lustrous. The dried noodle obtained from the sheet has the quality not a bit different from the dried noodle made of only wheat flour.
